Brown hazy body, highly carbonated. Smell has red fruit, solid sourness, raw oak, a touch of vinegar. Bold. Flavor takes it down a notch, more simplistic although still layered. Heavy on the sweet, tart and sour cherries. It is apparent this was barrel aged from the very mild vanilla and wood notes. Sickly sweet cherry juice comes through on some finishes. The feel is great- medium body, very fluid, well carbonated but not harsh.

It’s brewed in tribute to a fellow Colorado craft beer pioneer and Vietnam vet who died fighting a 2002 wild fire outside of our Lyons hometown.

We used Mendocino Merlot to brew a batch of Ritual Roasters "El Angel" Costa Rican Coffee - that's right, we used Merlot instead of water to make the coffee. After brewing, we aged the wine on fresh cut Jalapeños. The Merlot is elegant with plum and blackberry flavors that are enhanced by the rich coffee. The Jalapeño brightens the bold coffee flavors and adds a delicate warmth from the spice. Enjoy now and serve cool.

This year we’re taking it to the next level by dry-hopping it with Pekko hops—a new varietal from Washington’s Yakima Valley—which in turn add notes of stone fruit, orange, lemon and mint to this bready, toffee-like beast of a beer.

Some might even call it inevitable.
