It’s made from delicious apple and pear juices. We use champagne yeast in all our ciders and ferment for them 10-14 days. We then cold-filter 4 times and carbonate them before bottling or kegging. It is 5% alcohol by volume with a lovely pear nose and a smooth semi-sweet mouth feel with a dry finish.

Our sculpin IPA is a great example of what got us into brewing in the first place. After years of experimenting, we knew hopping an ale at five separate stages would produce something special. The Franciscan Chardonnay is pale yellow in color. On the nose, flinty mineral notes with hints of pear compote and vanilla bean, followed by toasted hazelnuts and Meyer lemon curd. Lovely, creamy, and vibrant with honeycrisp apple and pear fruit filling the palate. White nectarine and lemon zest lead to a round and generous mouthfeel with a crisp line of minerality.
Green Flash Brewing Co. - Passion Fruit Kicker

We added mostly late additions of this experimental hop varietal in order to provide a nice tropical fruit aroma while keeping the IBUs in the 40-ish range. Then we headed to Stone Farms to source some passion fruit. The passion fruit we found there was mind-blowing in all aspects. After cutting open the fresh fruit and tasting the beautiful, bright orange seed-peppered juice we all had ear-to-ear smiles.
