A collaboration beer between Mikkeller and Against the Grain Brewery. Simply a Blood Orange Pilsner. Brewed with German Pilsner and munich malts, hopped with American Citra, Columbus, Amarillo and Czech Saaz and fermented with Danish lager yeast. Then we added the zest and juice from a shit-ton of blood oranges. The result is a nice easy drinking lager that exhibits a tart and citrusy aroma and flavor.

Originally an Against the Grain Brewery and Brouwerij De Molen collaboration beer. For the first incarnation, De Molen head brewer Menno Oliver hopped in a muscle car and drove straight through from the Netherlands to Louisville, KY (that's USA folks) to brew this bourbon inspired ale, and we liked it so much, we decided to do it again. We took the ingredients in bourbon whiskey (Barley, Rye, Corn) and then smoked them with cherry wood and brewed a huge imperial stout with them. Then to top it off we aged it in Pappy VanWinkle Bourbon Barrels. The resulting beer is rich, smokey and complex, with a bourbon character of caramel, vanilla and spice.

This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety “Citra.” In Citra Ass Down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma.

Carefully crafted with the finest wheats and with great experience, specifically 4 years with the Math Club and Golf Team, 1 year with the NHS, Spanish Club, FBLA and Wrestling team, this lager will quench your thirst, as a good beer should. This Lager’s motto is “Traffic School – the best way to party after receiving a traffic citation.”

FLESH! Ah-ahhhhhhh!!!!!!! Pumpkin of the Universe! It finally happened. Jerry made a pumpkin beer. He hates pumpkin beers. Good thing this is the best pumpkin beer in the whole damn universe. A healthy dose of roasted gourd-flesh in the mash and a bit more in the boil pair well with the Chinese 5 spice-sac we dangled in at the end of the boil. Some gentle German hops help bitter up and balance out this ale. Suck the flesh. Pumpkin flesh.

Against The Grain - Galangal Action
Style: Fruit Beer

Nothing more pleasurable than finding yourself smack dab in the middle of some nice galangal action. The second installment of the chef collaboration series. We were happy to partner with Chef Levon Wallace from Proof on Main. Chef Wallace brought his culinary expertise and homebrewing experience to the table and came up with a incredibly refreshing and unusual brew. Pilsner malt, spelt and torrified wheat make up the grain bill, balanced with the fruity and resinous New Zealand hop Pacific Gem. Then we added galangal, a tropical herbaceous plant rhizome imparting a spicy, floral and earthy flavor and aroma. Then kaffir lime leaves were steeped to provide a perfumed citrusy aroma. Both galangal and kaffer limes leaves are used in traditional Asian cuisine. And if that wasn't weird enough, post fermentation we added the juice of several yellow midget watermelons straight off the Proof farm. The resulting beer is fresh, flavorful and interesting.

On our last hip-hop camping trip Busta suggested we do a S’more-style smoke beer. We washed down our s’mores that evening with a delicious Rauchbier whilst taking in the comforting aroma of crackling wood in the warm light of the campfire. We all agreed: he was onto something. This Rauchbier with cocoa nibs is dark and smooth, more reminiscent of Busta’s days with Tribe Called Quest, but with a boozy, smoky angle that reminds us of edgier times to come. With generous portions of caramal, melanoidin and a hint of roast malts, there is a distinctly toasty, sweet flavor and aroma that edges on graham cracker and marshmallow. Take a sip and let us hear ya say: Gimme S'more.

Against the Grain's answer to light beers. This session style IPA is all about the hops, but not about the bitterness. We started with the malt base of pale ale, Vienna and wheat, then American hops were employed only late in the boil and post fermentation. The result is a pleasant hop aroma and flavor without the drying bitterness and alcohol.

It may be fall, but a light, refreshing Witbier is welcome any season. Our take on this Belgian classic replaces the additions of bitter orange peel and coriander in the boil to cardamom seeds and grapefruit zest. Instead of a sharp citrus note and spicy aroma lent by the traditional ingredients, these additions lend rich orange and floral notes and juicy grapefruit flavor. A mild, lingering sweetness and mouthfeel still come across from the generous portions of wheat to lend balance and body. This beer is totally bangin’, bra.

Style: Belgian Tripel
ABV: 8.90% IBU: 38.0

This Belgian Trippel was made with a huge load of pilsener malt and a generous helping of candi sugar fermented thoroughly by a Belgian Trappist yeast strain. The result is a crisp, clean flavor with just enough candy sweetness and a variety of fruity flavors from the yeast. Post fermentation, we aged this beer on French oak to further dry the perception and to add the spicy, vanilla notes.

	Against The Grain - Kamen Knuddeln Style: Sour ABV: 6.50% Much like our more beloved and covet cousin sour mash bourbon, this ale is brewed in the manner of 'souring the mash'. Moderately hopped to balance the sweetness of this Kentucky Common, one will get notes of dry fruit, sweet tarts, and hints of tannin from a very small amount of barrel aged character.

It’s slightly tart and packed with tropical flavor.

Brewed with enough Maris Otter pale, Aromatic and caramel malts to nearly overflow our mash tun. We then balanced this beer with some English Nugget and Kent Goldings hops. The resulting ale was sweet, nutty and powerful, but we didn't stop there. The entire batch was put into used Angel's Envy barrels for nearly 3 months to gather the residual bourbon flavor and some aromatic and drying oak notes.

Style: Bourbon Barrel Aged Smoked Ale
ABV: 8.50% IBU: 25.0

Truly a ground breaking beer, this Barrel aged Rauchbier was an attempt to replicate the flavors present in Islay Scotch Whiskey. We used Munich malt as a base and added copious amounts of Beechwood and Peat smoked malt, which provides the intense smoky and earthy peat flavors found in Scotch. Then the addition of Alderwood smoked salt lends a crisp brininess that is reminiscent of the sea air in the Islay region of Scotland. Aged in used Angel's Envy Bourbon Barrels to give an intense caramel, vanilla and whiskey flavor.

Is it even beer anymore? Why, yes, it is and it’s not like those other pastry bocks. Maple Bockin’ Pastries is coated in over 200 pounds of West Virginia maple syrup sourced by Brewstel and brewed with Morada Cia Etilica for a beer that is sweet but not too sweet. Aged in bourbon double-oak barrels this dopplebock style lager has notes of dark chocolate and tobacco. It’s thick, just like your favorite 100% maple syrup.

A mix of Wakatu, Citra and Huell Melon hops bring this lush array of fruit flavors and aromas as well and a firm, crisp finish. Turn your back to the darkness, and rise with the dawn.

A healthy blend of traditional British malts give this popular style a semi-sweet, biscuity, slightly roasted flavor. Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but we cocked it up a bit with some Cascade late in the boil just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.

We took a surrealist approach to this brew and made a truly masterful work of zymurgy. This is not a beer. It is barley, rich and toffee-like, toasty and topped with a creamy head. It is hops; firm, crisp and piney: a perfect compliment to a fruity, spicy alcohol bite. It is nothing less than a mind-bendingly balanced American Barleywine. This is not a beer. This is art!
