A bright initial bite of green apple melds with the savory, golden tones of hazelnuts and rich, red-hued baking spices. A complex, utterly unrepeatable blend pulled from a medley of Willett, Heaven Hill, Heaven Hill Double Oak, and Elijah Craig barrels filled throughout 2018 and 2020. FOMO was aged with Madagascar vanilla in our traditional "FO" method, then debarrelled and steeped on 80lbs of Mostra-roasted coffee beans from the Loma la Gloria farm in El Salvador. Aromas of coffee tinted with baking chocolate, dulce de leche, and crispy corner pieces of brownie swirl onto the palate through waves of rich, creamy vanilla. At a two thirds ratio of double mash, this liquid stains the glass and lingers on the palate with a chewy caramel lacing and the faintest hint of peanut butter cups.

We've long maintained that fucking around is a critical part of the scientific method. In fact, the amount of fucking around you’re willing to do is directly proportional to the amount of finding out you’ll accomplish. Upon observing this year's #FundamentalObservation blend, we hypothesized that the base would be uniquely suited for a chocolatey almond treatment. We bench-trialed cacao nib varietals and chocolate additions, experimented with different degrees of roasting on sliced almonds, and tested how long we let both adjuncts steep in the liquid. We've drawn our conclusions, and we're ready for the peer review. #FAFO, or Fudge Almond Fundamental Observation, is rich and nougaty with a silky fluffiness on the palate that hits like homemade fudge. The almond aroma is unreal, and it swirls right onto the palate to run ribbons of marzipan through rivulets of chocolate. “The only difference between science and screwing around is writing it down.” - Adam Savage

Mass Action is a select blend made up of last year's favorite double mash barrels and 24-month aged barrels finished through 800lbs of fresh coconut pieces, 650lbs of toasted coconut, a veritable island of bananas, and 300lbs of Jet-Puffed's finest marshmallows. Cold first sips are pure coconut. Let the liquid warm a bit and the dreamy sweetness of marshmallow bounces onto the palate, making way for a wave of rich, ripe banana. Caramel tones of toasted coconut and barrel balance the blend with a complex, lingering finish.

It's impressively dry and delicate with sharp nuances of each of the unique fruit elements.

When we're out at festivals pouring the latest barrel-aged monster stout, fruit-laden smoothie sour, or double dry-hopped hazy IPA, unlabeled lager cans pulled right off the packaging line are the currency moving behind the booths. Pale straw-gold with brilliant clarity, our humble nod to our industry's roots was built with all-German ingredients and spunded for a natural carbonation and a clean, round mouthfeel. Noble German hops (Tettnag, Mittelfruh, and Magnum) contribute a spicy floral nose that's balanced by a softly sweet white bread malt flavor on the palate.

Flavors of dark fruit, baking chocolate, and caramelized sugar from El Salvadorian coffee beans meld with the spicy rye malt and bittersweet molasses of Darkstar November, our original barrel-aged beer.

With a first strike of port and a finishing blow of bourbon, these unique barrels amplify the roasted chocolate core of the base beer and further evoke soft flavors of raisins and preserves. Complex layers of deep port sweetness are fortified by cacao nib additions from Ecuador and Ghana to finish this Barrel Aged Chocolate Porter!

It was conditioned on an exclusive blend of coffee beans roasted by Onyx Coffee Lab for a complex foundation of chocolate brownie and burnt sugar undertones. ...and when you move, fall like a thunderbolt.
