Our brewers developed a silky, full-bodied wheat ale which we began fermenting with a Belgian-style witbier yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in Beret.

We designed a recipe with bitter orange peel and coriander and set it to ferment and age with our mixed house culture and Bavarian wit yeast in the designated foeder for four months. Using the Jester King house culture for bottle conditioning, Bouffon features some of the classic notes you’d look for in a wit, including banana, pear, vanilla, bubblegum, white pepper, lemon and a signature yeast profile.

Bruery Terreux - Brazo Brazo (2019)

Blackberries as big as your palm, deserve a beer with flavors just as grand. This American Wild Ale was aged in oak barrels with Brazos blackberries. The addition of fresh blackberries impart a sweet-tart flavor with fruit forward notes. Pleasantly sour with a crisp and refreshing finish.

Goses are Red is a stylish match of a funky, crisp and tart gose with the soft sweetness of a rosé wine. The refreshing wheat-based beer begins with some of the qualities you’d expect from a gose, including coriander spicing and a light saltiness to complement the tartness imparted by our house cultures. Tthanks to time spent in an oak foeder and the addition of grapes, which impart a refreshing rosé character.

Bruery Terreux - Humulus Terreux

Sometimes nature takes its course. Other times, we guide it. Humulus Terreux is a wild, India pale beer that gives us the best of both worlds. Nature lends us the wild yeast, which we harness for a 100% Brettanomyces fermentation to impart notes of barnyard funk and earth, plus an active mouthfeel and a dry, signature finish. We complement these qualities derived from the brett by selecting a certain aromatic and flavor profile we want to achieve from hops. In this installment, we feature Mosaic hops, which contribute a little more sunshine to the funky, pale brett beer, in addition to juicy, tropical and berry fruit flavors.

We teamed up with our friends at Collective Brewing Project to create Minor Miner Grisette, a grisette-style ale aged in oak foeders with orange blossom and calendula flowers, inspired by traditional grisette beers enjoyed by industrial miners after a long day of labor. Though the environment of beer consumption has changed, this easy-to-drink beer still hits the spot when looking for a refreshing beer at the end of the day.

Oude Tart is a Flemish-Style Red Ale aged in red wine barrels for 18 months. It’s pleasantly sour with hints of leather, dark fruit and toasty oak. While this is one of the more classic beer styles that we make, it’s not a style that you can find too often in the United States. Originating in style from the Flanders region of Belgium, near the French boarder, this dark, sour ale has roots deep in brewing history and predates most of the ales that have become popular in contemporary culture.

Sour in the Rye is an American wild ale. A challenging beer to brew due to the substantial amount of rye malt, but you’ll be glad we took the time. The character of the rye asserts itself with clove and pepper in the aroma and flavor, and contributes a full body not generally found in sour beers. Pleasantly sour with notes of tart cherry, rustic earth and vanilla from barrel aging.
