Cascade Brewing - Apricot 2017

This Northwest sour ale is a blend of blond ales that were aged in oak wine barrels for up to 14 months with more than 13,000 pounds of fresh apricots from the Pacific Northwest. A flagship project in Cascade Brewing's sour beer portfolio, Apricot offers flavors of fresh and dried apricot fruit complimented by a tart acidity and lingering notes of apricot preserves.

Cascade Brewing - Blackcap Raspberry

ABV: 6.50%

This NW style sour blond ale was barrel aged for 28 months before spending an additional two months on 300+ pounds of Black Cap raspberries: think Nouveau Boujoulais with blackberries. Vinous then sweet aromas of tart blackberries are the first to be noticed. Sharp, acidic notes of tart berries and leather on the palate lead to a sharp, dark berry presence and a finish with a prolonged dry fruit note. This limited draft-only offering is a blender favorite.

	Cascade Brewing - Blonde Bombshell Style: Wheat Ale ABV: 4.30% IBU: 14.0 As the name implies, this is one knock-out of a beer. Brewed to be a light bodied, refreshing ale, Blonde Bombshell combines subtle malt and wheat flavors with a delicate Liberty hop aroma to create a sensational beer. Originally brewed as a seasonal, this beer was so popular it pushed its way into our regular line-up.

	Cascade Brewing - Bourbonic Plague Style: American Wild Ale ABV: 12.00% This blend of strong dark porters was aged in oak, wine and Bourbon barrels, then blended with a dark porter that had been brewed with vanilla beans and cinnamon. The blend was then aged an additional 14 months on dates.

Oregon is the United States’ largest producer of boysenberries, and while the parentage of this little mystery fruit is still unknown, it is believed to be a cross between a blackberry, raspberry, and a loganberry. This Boysenberry blend features sour blond and triple ales aged in oak wine barrels for up to two years with additions of fresh, Oregon-grown boysenberries and blackberries, offering intense flavors of fresh bramble fruit with hints of black currant, pomegranate, and mint.

Brunch lines are as much an institution as brunch itself in Portland, so we made a beer dedicated to the rain-soaked hordes of brunch-goers who patiently stand in line for their weekend fare. Inspired by the mimosa cocktail, Brunch Line features sour wheat and blond ales aged in white wine barrels for up to two years with Willamette Valley-grown Chardonnay grapes, then infused with fresh orange zest.

Few places embody the wild spirit of the Pacific Northwest like the Oregon Coast. To help protect this venerated landscape, we’ve partnered with the Portland Chapter of the Surfrider Foundation on our Coastal Gose blend. This interpretation of the historic Gose beer features sour wheat ales aged in oak barrels with ground coriander seed and sea salt harvested from Oregon’s coastal waters.

From notes of dark chocolate to bright citrus fruit and fragrant cardamom, this limited release captures a remarkably complex spectrum of flavors that belie the simple golden hue of this limited-release project.

Making its first appearance in over a decade, the 2017 project pays homage to the original blend, juggling a variety of base beers that offer clean and complex flavors through the lactic fermentation process that has come to define our Northwest Sour Ales.

This NW style sour ale is a strong blond ale aged in chardonnay barrels for up to 12 months, then aged with dried white figs and lemon peel or up to 12 more months. Aromas of sweet figs, golden raisins, and citrus zest are the first to be noticed. Hints of white wine grapes, lemon peel, and sweet figs roll across the palate, leading to a crisp lemon tartness in the finish that leaves a lingering sweetness on the tongue.

Kentucky Peach is a blend of sour wheat and quad ales aged in bourbon and wine barrels for up to 16 months with more than 7,000 lbs of fresh Northwest-grown peaches. Each day, we hand select only the ripest fruit to add to the sour wheat ales that have already been aging for 12+ months. The fruited ales will then age 5 months before blending it with the bourbon barrel-aged quads.

This NW style sour red ale is blend of red ales aged in oak barrels for up to eight months, then aged on fresh Bing and sour pie cherries for an additional eight months. Aromas of rich, dark cherries, oak and slight hints of cinnamon are noticed up front. Dark, tart cherries and light spice notes dance on the palate and lead to a rich, dark, tart sparkling finish of dark cherries and oak.

Manhattan NW is a blend of Blond Quad aged in Heaven Hill Bourbon barrels on 150 pounds of sour pie cherries for five months before additionally aging on apricot noyaux for three months. Aromas of cherries, Bourbon, sweet candy and hints of spice are noticed up front. Tart cherry skins and Maraschino cherries on the palate lead to a dance of rich cherry notes that are followed by slight Bourbon sweetness.

This NW style sour old ale is no trick, it’s all treat. We smashed and triple roasted 50 lbs of pumpkin down to 6 lbs, then aged the beer for 11 months on the roasted pumpkin in rum barrels. The aromas of spiced rum, mingled with the soft notes of roasted pumpkin, are notice up front. Spice, roasted pumpkin and rum is followed by a soft warming from within. Be warned, you might get pumpkin smashed!

This NW style sour ale is a blend of red and double red beers that were aged in bourbon and Pinot Noir barrels for 12- 24 months then blended with barrel aged Bing and Sour Pie cherries. Rich dark cherries, dark fruit, bourbon and hints of leather greet you on the nose. Tart dark cherries, dark caramels and hints of port on the palate lead to a bright tart dark cherry finish with hints of oak and bourbon that linger. Servus.

	Cascade Brewing - The Vine Style: Sour Saison ABV: 9.80% The Vine: Rosé is a barrel aged sour blonde ale refermented with locally grown Pinot Noir and Chardonnay grapes, combined with Piquette (must from the Pinot Noir portion, fermented with water and sugar). After fermentation we aged it on sediment & lees to draw out some truly unique flavors.

This limited collaboration project offers a unique combination of wood smoke aroma and tropical fruit flavor.

Cascade Brewing - Vitis Noble 2016
Style: Barrel-Aged Sour
ABV: 9.10%

Vitis Noble, meaning noble vine, features sour wheat and blond ales aged in oak barrels for up to 16 months with Willamette Valley grown chardonnay grapes, one of the most celebrated “noble” varietals. This northwest sour ale captures the vibrancy of chardonnay complemented by a kiss of French oak and notes of melon, apple and tropical fruit.
