This Tart Saison is brewed in the Belgian tradition of tart farmhouse ales. The magic happens when our house blend of Brettanomyces, Lactobacillus and Saison yeast throw an out-of-this-world party in our fermenters. Aged on various fruits, this yields a beer with a lacto forward nose, an intensely tart fruit flavor, a doughy complexity, and takes the word "refreshing" to a whole new level.

Council Brewing Co. - Beatitude Prickly Pear

We used real prickly pear fruit (no extracts) and achieved a delicious, bright pink colored beer (just in time for Valentine’s Day). This beer is sour with huge cactus fruit characteristics with some background notes of pear and lemon. When you tastes this beer, you’ll also get some watermelon jolly rancher flavor, which is surprising because we didn’t use any artificial flavorings.

Council Brewing Co. - Chalcedon
Style: Imperial Sour
ABV: 10.70%

Fermented with Brettanomyces, Lactobacillus and Pediococcus and aged in oak barrels for 11 months. Upon our first taste, the chocolate notes from the malt were the clear highlight. This flavor was enhanced by the subtle vanilla notes coming from the oak barrel. Taking the lead from these developing undertones, we added single origin cocoa nibs from the Dominican Republic, which contributed a distinct red berry flavor.

Style: Saison
ABV: 5.80%

Brewed with Traditional Belgian ingredients, this is fermented true to style with a "hot" fermentation in the 80F-100F degree range to derive significant fruity esters and spicy phenols. This Saison has intense peppery phenols, fruit notes such as citrus and pear, strong spicy Noble hop character, with a supporting grainy Pilsner malt backbone.
