Here gose our rendition of this 1000-year-old style, which originated in Goslar, Germany and used the area's mineral-rich water and open fermentation to deliver its characteristic tart and salt-tinged tang. Ours is kettle-soured and sea-salted, with the addition of the traditional coriander and some nontraditional lemon, orange, and grapefruit zest. This is one of the only beer types that has its own toast: when drinking gose, instead of "cheers," say "goseanna!"
