Higher mash temps preserve residual sweetness in the beer to complement the fruit. No bittering hops. We added Simcoe and Citra in the whirlpool once the wort had cooled to extract less alpha acid (bitterness) and maximize flavor contribution. Pink guava puree was added at the end of fermentation, and after a hefty dry hop of Citra and Mosaic we successfully made beer juice. Yep. Caved.

A touch of munich malt rounds out the flavor and a full 2/bbl DH dose of citra pellets lifts the aroma to citrus heaven.

Highland Park has a beer we are totally in love with called Timbo Pils that they call a “West Coast Pils”. In the spirit of our two GABF medals we decided to blend the two styles into what we are calling a “West Coast Keller”. Kellerbier being an old German style that is the “cellar” beer – or the unfiltered version of the more classically know styles such as pilsner or helles. We’ve taken a malt base that is close to that of Casa Azul and fermented with dried lager yeast that Bob has been super successful with on Timbo Pils. Hop schedule in the kettle looks more like a German lager, but the dry hop is where we get all that West Coast steez.

The Surfin' Bird was drawn by legendary SoCal surf artist Steve Nazar, famous for the "Thrilla Crew". This hop combo of Citra, Loral, and Idaho 7 will hit you like a double overhead South swell! Last year we spent some time exploring a few versions of this beer, and we are excited to bring it back with this new & improved recipe and some updated artwork as well. The ABV was droped slightly coming now at 6.5% and settling on a fruit lineup of Dragonfruit and Passion fruit for a big aromatic fire-power as well as bright color.

A brazenly hop-forward beast of a beer, with a huge passionfruit nose. A subtle caramel character provides a malt backbone to shoulder the massive amount of dry-hopping that gives this beer its unique aroma and hop flavor. Two 5 Left is the runway that sends planes screaming right over El Segundo. We always knew we would name a beer after this local landmark, and when it came to naming our first Double IPA.

DOMINATED by Nelson hops in the aroma, crushed apple, grassy, white wine grape, with that very familair New Zealand funk. Medium full body give a great base to work from, and those toasty, doughy malt notes don't stand a chance next to the massive hop character. Super ripe stone fruit along with pine, resin, manuka, and pithy grapefruit in the flavor.

A nod to our neighbor by the beach, as well as the Grecian Titan Deity. This beer is for chocolate lovers. A bit on the sweet side, with a nice dark roasted coffee bitterness to balance. A huge chocolate presence throughout supported by a heady, velvety texture with creamy carbonation. Finished with whole vanilla bean.

Super excited about this hop combo. We used it in 'LA Showdown' with some red malts, but this time paired it with a lean and mean malt profile. Expect some bright berry fruit, a flourish of tropical notes, and a touch of evergreen in the finish. Old school favorite, Simcoe, just found a sultry dance partner in new comer, Vic Secret!

El Segundo Brewing Co. - White Dog
Style: Wheat IPA
ABV: 6.70%      IBU: 53.0

Named for Rob's dog, the White alludes to our use of 50% wheat instead of barley in this beer. Aside from that though, this beer has very little in common with what most people consider a "wheat" beer. The wheat in the malt bill gives the beer a lighter texture and mouthfeel, and helps to accentuate the bright citrus characters of the fruity West Coast and New Zealand hops we use. The result is an IPA that Hop Heads will love, but a brew that is immediately approachable for most people.
