	Flying Dog Brewery - Barrel Aged Gonzo Style: Imperial Porter ABV: 9.20% IBU: 85.0 Just when we thought our Gonzo Imperial Porter couldn’t get any better, our brewers age it in oak whiskey barrels for at least 180 days. The result is vanilla notes from the oak and soft whiskey warmth that pair beautifully with any dessert involving vanilla, chocolate, and coffee.

When Joy needed it – during a particularly necessary New Year’s Day brunch – the bellini was there for her. She vowed then and there to bring the deliciousness of her Italian savior to the masses. Armed with determination and a damn good pun, she pitched the idea of marrying sweet peach with a tart Berliner Weiss to our brewmaster. Now, we’re all believers.

Kyle is a numbers guy. He spends his days crunching, analyzing and forecasting to the point where spreadsheet has become a verb. If anyone needs a beer at the end of the day, it's this guy. His Rarities pitch had the data to back it up, but what got our brew team excited is the combination of juicy citrus hops and tropical Guava juice.

It’s the artisanal answer to the easy-drinking, south-of-the-border slammers the younger versions of ourselves knew and loved. Flaked maize makes up one third of the malt bill and highlights the distinctive corn and cracker flavor traditionally found in Mexican lagers. Agave is added at the end of the boil and the lime peel post-fermentation to impart a distinct, zesty character and a crisp, clean finish.

Crushable. It's the word that gets thrown around most frequently at our annual Brewhouse Rarity Pitch Session, where anyone can pitch a beer to our Brewmaster. It's not often attributed to bold stouts though. But that's exactly what Andrew, one of our resident tour guides, envisioned. A graceful blend of sweet and oatmeal stout profiles, with a touch of smoky complexity, which will surprise in its drinkability.

Developed alongside over a dozen Single-Hop Imperial IPAs. The truth was three years in the making and has some of the most unique hop varieties available today. The Truth's sharp hop bitterness begins with pine on the nose and evolves into bright citrus and subtle stone fruit flavors. Pair this beer with sharp cheddar cheese and light, spicy proteins.

Style: Hazy IPA
ABV: 6.20% IBU: 35.0

The hops are Kanye West, the yeast is Daft Punk’s Discovery, fermentation is…OK, we’re not going to try to decode Kanye’s psyche, but you get the idea. A dry hop during fermentation allows the hops to interact with the yeast, which can create different aroma and flavor profiles than what we would see in those same hops with a traditional dry hop and filtration.

	Flying Dog Brewery - Vineyard Blonde Style: Belgian Golden Ale ABV: 6.40% IBU: 25.0 Vineyard Blonde was brewed with 500 gallons of Vidal Blanc young wine from Breaux Vineyards in Purcellville, Virginia. What do we mean by young wine? As soon as grapes are harvested and pressed, they begin a natural fermentation that was halted once the juice was added to the beer during fermentation.
