Imperial Stout aged in Bourbon Barrels with Bananas, almonds, cassia bark, and natural flavors. At the time when we first released this beer, the brewery hadn’t experimented with bananas much. However, Quinn had a good feeling that the fruit, along with almond and cassia bark, would be perfect ingredients in a bourbon barrel-aged imperial stout — indeed, he was right. Sure to bring a bit of flair to your palate, this decadent pour is well-balanced with deep caramelization, aromas of fresh baked banana bread and warm notes of cinnamon and almond.

After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created.

This reserve sees three sets of Old Fitzgerald barrels of varying ages from the distillery’s Old Fitzgerald’s Bottled-In-Bond Decanter Series. This Reserve highlights the distinct characteristics of the Barleywine aged in 14-year, 16-year and 17-year-old barrels of the whiskey. Bringing back the classic English-style Barleywine for the first time since 2018, the Two-Year Barleywine Reserve evokes the intricacies from Old Fitzgerald’s Bottled-In-Bond Series for a smooth taste of rich malt, entwined with notes of toffee, cherry, vanilla, fig, and almond.

Feeling nostalgic this year, we dug back into our Bourbon County vault and pulled out an iconic recipe. Back in 2013, we released our "Backyard Rye" and our brewer Mike Siegel found himself hand picking mulberries off the trees just steps away from our Goose Island Barrelhouse here in Chicago. This year, inspired by that initail release and by his own childhood memories of picking fruit in his backyard, Mike was enthusiastic to work on this years 2023 version. This barrel-aged stout is first aged in bourbon barrels for at least 1 year and then finished and blended with mulberries, boysenberries, & marionberries. Each addition of berry contributes its own distinct flavor profile, with adding some sweetness and others providing acidity and complexity. A taste of the past, this imperial stout is a balanced and nuanced play on fresh fruit, vanilla, and chocolate.

Welcoming back another member from the family for this year, 2023 BCB Bananas Foster Stout makes its debut on the national stage. This recipe was first released in 2017 as Bourbon County Proprietors Stout only to Chicago drinkers. Beloved by many, that release is especially near and dear to innovation brewer Quinn Fuechsl's heart. At a time when Goose Island first released this beer, the brewery hadn't experimented with bananas much. However, Quinn had a good feeling that the fruit, along with almond and cassia bark, would be the perfect ingredients in a barrel-aged imperial stout--indeed, he was right. Sure to bring a bit of flair to your palate, this decadent pour is well-balanced with deep caramelization, aromas of fresh baked banana bread, and warm notes of cinnamon and almond.

At Goose Island, we believe ideas and inspiration can come from anyone in the Goose family, and our Biscotti Stout is a perfect example that came from our very own HR team. Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. The biscotti enhances flavors already found in our Bourbon County Stout and adds strong notes of nostalgia from your Italian grandma’s kitchen. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.

Caramella or ‘candy’ in Italian is a wheatwine aged in Larceny Wheated Bourbon barrels with apple, cinnamon, and natural caramel flavor added after aging. Just like last year, the sweet smoothness from the Larceny Wheated Bourbon barrels adds a lingering warmth that complements the added flavor nuance. It’s nostalgia-inducing flavors are reminiscent of a caramel apple. Our Lead Lab Analyst, Joey Tidei, created this variant as a tribute to his love of seasonal flavors. This luscious embodiment of caramel perfectly paired with a slightly-tart apple flavor will transport you to a crisp Autumn day.

The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, revealing complex characteristics like red fruit, ripe cherry, and light toffee, which are not found in the original oak barrel itself. Bourbon County Special #4 Stout is an oatmeal stout variant of our original Bourbon County Stout recipe, also aged in bourbon barrels, that uses crystal oats to add a nutty character and a smooth mouthfeel. After barrel aging, we added Intelligentsia Coffee, both their cold coffee and single origin coffee beans from Ethiopia, called “Metad Buku,” to bring out a pleasant fruity coffee character. Lastly bourbon barrel-aged maple syrup from Bissell Maple Farm in Ohio is added which provides complexity to the nutty oats and coffee to round out the flavors, ultimately reminiscent of your breakfast ‘special’ at the local diner.

Created in partnership with our next door neighbors, Intelligentsia Coffee, Café de Olla is inspired by the traditional Mexican beverage of the same name. We added coffee beans and cold coffee to Original Bourbon County Stout and then enhanced this beer further through additions of cassia bark, orange peel, and panela sugar. The resulting beer is layered in complexity. Coffee and orange permeate the nose and are followed by notes of cinnamon, chocolate, and a pleasant sweetness.

After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created.

This release is dedicated to Jonny, a long time Goose Island employee. Jonny, and Brewer Quinn, came up with this recipe after Jonny’s recent victorious battle with cancer. Jonny lost the ability to taste many flavors, an unfortunate consequence of battling cancer. He almost completely lost is palate and mangos and cinnamon were two of the few things he was still able to taste. We’re happy to say that Jonny is now a cancer survivor! This beer pays tribute to the flavors that were never lost.

For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created.

Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.
