Style: Triple IPA
ABV: 10.30%

This SUPER TROPICAL triple IPA received a first dry hop of Mosaic, a second dry hop of Citra, and then a colossal 3rd dry hop of Nelson and Strata. The flavors and aromas here are gigantic and tropical tropical tropical — pink guava, passionfruit, pineapple, papaya, and mango are all here in abundance. The body is silky rich, with the perfect sweetness to support that generous fruit character.

A slow pour delivers a long-lasting, snow-capped mountaintop head. As with all of our pilsners, we utilized a traditional rising-temperature step mash with 100% German pilsner malt.

Style: Double IPA
ABV: 8.00%

Hopped with Amarillo and Mosaic, this beer is the full fruit salad: overripe stone fruit, tangerine supremes, fresh cantaloupe, papaya, and windfall apples. Shortbread cookie rounds out the flavor giving balance to the sunbaked sweetness that lingers long after each taste. A plush and pillowy mouthfeel delivers the whipped cream on top!

It is loaded with gummy bear hop flavor and double dry-hopped with El Dorado, Citra, and Cashmere hops. It explodes out of the glass with flavors of pineapple, guava, lime, coconut, orange blossoms, mango, gumdrops, and creamsicle deliciousness.

ABV: 6.50%

Camoufleur is our new brett saison. It is step-mashed and brewed with 100% pilsner malt — very old world in execution! Spicy, funky, and laced with noble hop aromas. We blended this saison with just a smidgen of barrel-aged golden sour to achieve the ultimate balance and complexity. Dry hopping with Saphir hops brings extra tangerine and spice notes.

	Grimm Artisanal Ales - Castling Style: Farmhouse Ale ABV: 5.50% IBU: 65.0 As our friend Yvan De Baets writes, farmhouse ales were "either sour or very bitter." This is the latter -- a bitterly refreshing, eurocentric farmhouse ale produced by step mashing a 100% pilsner grist and hopping heavily with Hallertau Hersbrucker and Tettnang.

Grimm Artisanal Ales - Chronos
Style: Pilsner
ABV: 5.00%

Building its base up from step mashed German pilsner malt, we hopped with Huell Melon in the kettle, fermented in the upper 40’s, and dry hopped with Saphir — a delightful German varietal that lends black-pepper spice and a marked noble character reminiscent of Hallertau Mittelfruh. Then we lagered the beer at near-freezing temperature until it achieved a natural crystal clarity. It is quite hoppy in an old-world mode, ultra-soft on the palate, and rewards a slow pour with a dense head of snow white meringue-like foam.

Circle of Fifths is a bright, tart, and rustic mixed-culture multigrain farmhouse ale. We used spelt, rye, and oats along with a blend of noble hops and aged hops; and we blended oak-fermented sour beer together with fresh hoppy saison to create a coupage that displays brett funk, lactic tartness, farmhouse esters, and continental hop character.

This Vienna-style lager was brewed with a double decoction mash — our first time using this historical process for our lagers! With a base of German Vienna malt and a touch of CaraAroma, Cross Stitch is a warming, toasty lager with a smooth mouthfeel. Aromas of freshly baked bread and subtle caramel are complemented by flavors of sweet malt and toffee, ending with a crisp finish.

Toasty Vienna and Munich malts build a layered base that provides a sweet warmth that never feels cloying. Dark cherry leads on the nose with quieter notes of leather, tobacco, and oak. A balanced showing of the sweet & tart characteristics from each fruit is found in the flavor a juicy burst reminiscent of real maraschino cherry, the refreshing pucker tartness and picked sweetness of raspberry, and tangy punch from cranberry.

Style: Imperial Stout
ABV: 10.00%

Double Negative pours jet black with burnt orange highlights. A long lasting tan head leaves abundant lacing. Aromas bursting from the glass include coffee, bitter chocolate, caramel, black currant and blueberry. Creamy and viscous on the palate, the flavor initially follows the nose. A pop of smooth bitterness comes after, and then a lingering, roasty finish.

This 6.4% IPA brewed with Columbus, El Dorado & Azacca offers complex layers of intensely dank northwest woods in a crisp and refreshing format. El Dorado invites us in with a hint of candy orange on the nose, but Columbus delivers the whole forest–resinous pine, warm cedar, anise hyssop and crabapple. Very dry finish with a satisfying bite of bitterness.

Brewed with mountains of flaked oats and mounds of Mosaic, Sabro, and Motueka, Fluffy Tufts is our new ultra soft and fluffy DIPA. We switched up our DIPA water profile to produce maximal Charmin Cloud Teddy Bear Energy. Aromas of papaya and pineapple upside down cake waft from its billowy white foam, and on the palate we get mouth-coating hop resins with big papaya and guava and background hints of lime, black tea, and sweet coconut cream.

We’ve taken one of our most beloved beers, Lambo Door, and reconfigured the DIPA as a bite-sized, super crushable session IPA. Matchbox Lambo is all mango and peach on the nose — like opening a bag of Haribo gummy rings. Notes of Valencia orange pop in the flavor. The body is light and dry with a mild and refreshing bite of bitterness.

Midheaven is so named because it is an intersection, the best of both worlds. Blended from 50% stainless-steel mixed culture ale and 50% golden sour aged in red wine barrels, then refermented on apricots, this beer is complex, clean, and elegant. It reveals flavors of juicy apricots and sour candy, with a sustained fruity-tart finish laden with subtle oak tannins.

This saison de coupage — 70% young saison blended with 30% barrel-aged golden sour — with blackberries and grapefruit zest is a bright and refreshing treat. The Belgian yeast esters are a subtle through line from aroma to flavor — a supporting character to the fruit. Tart and juicy blackberry aromas tickle the nose while the grapefruit comes through more in the flavor with a burst of fresh citrus up front that fades into a zesty bittersweet finish.

	Grimm Artisanal Ales - Piña Pop! Style: Sour ABV: 5.00% We brewed this piña colada-inspired Pop! beer with half a ton of toasted coconut and an obscene amount of pineapple. Milk sugar, Tahitian vanilla, and a final dose of Cashmere dry-hops amp the coconut aromatics and transform this Pop! into sour candy juice.

Psychedelic Gardener, our newest double IPA, is a hallucinogenic swirl of floral, fruity and resinous hops! Hopped with Mosaic, Amarillo, and Idaho 7, it's presenting aromas of raw, green hops, candied curaçao orange peel, meyer lemon, and lilac. Overripe red berries, cantaloupe, and spearmint on the palate, with a slightly dry, bitter finish.

Grimm Artisanal Ales - Shadow Work

Shadow Work is our new blended mixed culture dark sour brewed in the flemish red/brown style. We blended barrel-aged sour with young brown ale in the traditional manner, and the result is a perfectly balanced delicately tart beer with flavors of caramel, oak, dried dates, and a touch of sweetness. This is a great beer to cellar as it will develop new complexity and character over time.

Our innovative double mashing technique achieves an unprecedented liquid density and velvety texture.

Super Spruce owes its immense pine aromatics to a double dose of resin. The new growth of spruce trees layered with Chinook hops create a complex profile of fresh pine that includes floral, citrus, cola, and bubble gum undertones. This unboiled beer is luminous and hazy with a grapefruit-like acidity that perfectly showcases the bright coniferous flavors. Sea salt rounds the mouthfeel, while white oak provides tannic structure.
