Hazy Double IPA brewed in collaboration with our forever friends at Fonta Flora Brewery @fontaflorabrew in North Carolina. For this second iteration, we brewed it with all the forms of Citra we could get our hands on. Citra American Noble in the boil, Citra Cryo in the whirlpool, knocked out onto Citra Dynaboost in the fermenter, dry hopped twice with Citra T90 and more Citra Cryo, then Citra Hyperboost added to the brite beer tank right before packaging. The aromatics on this one have literally been filling up the room here at Jester King, so we’re excited for you to try it.

Jester King Brewery - Atrial Rubicite

Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas hill country, souring bacteria and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

Beachtimez Sportzketball was brewed on March 24, 2016 with Hill Country well water, malted barley, malted wheat, raw wheat, and hops. It was fermented in stainless steel with our mixed culture of brewers yeast, and native yeast and bacteria harvested from the land and air around our brewery. It was then refermented in stainless steel with loquats grown here in central Texas.

Jester King Brewery - Cerveza Sin Frontera

We brewed our version of Cerveza Sin Frontera at our brewery in October 2013 with the help of Chad Yakobson of Crooked Stave and Raphaël Mettler of Trois Dames. The wort, brewed with Hill Country well water, barley, wheat, oats, and hops, was initially fermented in stainless steel for three months, then refermented in Spanish sherry barrels for twelve months, and finally refermented in bottles, kegs, and casks for three more months.

Jester King Brewery - Citrus Froot Direct
Style: Farmhouse IPA
ABV: 6.60%     

We brewed a dextrinous wort with raw wheat and flaked oats over a base of TexMalt San Jacinto 2-Row and Wildfire Pale Malt. We then pitched our mixed culture in stainless steel with a bio-trans dry hop of Ekuanot and Amarillo. Following primary, we refermented the beer with fresh, hand-juiced Dancy Mandarins & Hamlin Oranges from Orange Blossom Farm in Utopia, Texas west of San Antonio. We then dry hopped the beer two more times with Ekuanot and Sabro cryo before adding the hand-processed zest from the mandarins and oranges! 100 percent naturally conditioned in bottles and kegs. This ode to Texas citrus has notes of Orangina, mimosa, honeysuckle, orange blossom perfume, Painkiller cocktail, and Lacto-fermented orange marmalade.

Jester King Brewery - Das Wunderkind
Style: Farmhouse Ale

Das Wunderkind is one of our oldest beers and one of the first to incorporate mature, barrel-aged wild beer. Back in November 2021, we brewed a young, fresh, hoppy farmhouse ale, blended it with mature, barrel-aged wild beer, then gave the blend a fresh dry hop of El Dorado, Motueka, Meridian, and Simcoe. We then naturally conditioned the blend for eight months in the bottle, during which the beer went through a period of ropiness. After bottle maturation, the beer is presenting bright and tropical with crisp, tart acidity and pungent guava and passionfruit flavors and aromas. The combination of time, pressure, and native yeast has a beautiful ability to unlock bold flavors from the dry hops, yielding some of our favorite farmhouse ale. 5.0% abv.

Demi-Tone was made by taking a young (1-2 month old) farmhouse ale brewed with well water, malted barley, malted wheat, oats, and hops, and refermenting it with the spent (or leftover) blueberries from Jester King Colour Five. It is unfiltered, unpasteurized, and 100% naturally conditioned. Demi-Tone is 6.3% alcohol by volume, 11 IBU, 3.6 pH, and has a finishing gravity of 1.001 (0.25 Plato).

EEZY PEEL is a farmhouse ale brewed with well water, TexMalt Llano Pilsner, Denton County Wheat Malt, and a touch of raw wheat. We kettle hopped it with Organic Golding from The Oregon Hophouse for about 18 IBUs. Around this mark, we find the acidity from fermentation and the fruit creates a harmonious, well-integrated soft, drinkable tanginess. After primary fermentation in stainless steel with our mixed culture, we re-fermented with fresh/frozen mangoes at a ratio of two pounds per gallon. While this sounds like a lot of fruit (and it is), the result is a really dry, drinkable, quenching fruit beer, which again has been one of our go-to's lately.

Single decoction mash with 100% Weyermann Eraclea malt (grown near the Adriatic Sea northeast of Venice). Kettle hopped with Hallertau Magnum and Saphir then dry-hopped with strictly Saphir. Fermented with lager yeast, Fermentis SafLager 34/70. Lagered for 8 weeks. Dry, earthy, peppery, herbal, with a touch of floral and a pleasant bitterness. Crisp and drinkable. 4.8% ABV.

We're excited to release a new dry-hopped farmhouse ale re-fermented with fresh lime juice, grapefruit juice, and wildflower honey called Landive! Landive falls in line with our long tradition of making dry, drinkable, low-to-medium strength farmhouse ales with interesting fermentation, fruit re-fermentation, and dry hop flavors / aromas. We brewed with Hill Country well water, Texas malted barley and wheat, and Sabro hops. We re-fermented with Texas wildflower honey, lime juice, and grapefruit juice, then dry hopped with Citra, Sabro, and Mosaic Cryo. The result is a delicious meld of citrus, honey, tropical hop aroma, and authentic farmhouse ale.

Mr. Mingo, a farmhouse ale with roselle hibiscus. The inspiration was to make a simple beer with a subtle adjunct. To make Mr. Mingo, we brewed a simple saison with barley and wheat from Blacklands Malt and raw Texas Hill Country water from our onsite well. We added hibiscus flowers at the end of the boil and then later dry hopped with more. In total, we used around 1 pound of hibiscus per barrel.

Our latest batch of Mr. Mingo Hibiscus Saison is out today! Continuing the Tiki-inspiration behind Mr. Mingo, we added Tahitian vanilla and raspberries from this year's Atrial Rubicite. Brewed with well water, Texas barley, oats, milk sugar, raw wheat, hops, and roselle hibiscus. Fermented with JK mixed culture in stainless steel. We get notes of berries and cream and raspberry Greek yogurt. 6.6% abv.

Look for a classic sweet corn flavor backed by an herbal, grassy hop profile and crisp drinkability after 8 weeks of patient lagering.

This is our rendition of an ancient Swedish farmhouse ale called Gotlandsdricka, which we aged in Old Tom gin barrels for several months with wild yeast and souring bacteria. Gotlandsdricka was brewed with birchwood smoked malt (smoked in house), juniper and Myrica gale. After seven months of oak fermentation and maturation, we blended the barrels and aged the beer for an additional six weeks.
