Modern Times Beer - Accumulated Knowledge
Style: American IPA
ABV: 6.20% IBU: 65.0

IPA with Simcoe, Oregon Horizon, and Amarillo hops, and two-row, white wheat and pale malts. We’ve spent years obsessing over how to create the bomb-diggiest of IPA’s. We’ve scoured the globe for the choicest hops, exhaustively refined our malt bills and yeast strains, and fine tuned our methods and recipes to the point that some would consider ridiculous. We wouldn’t, and you’re about to taste why. VIbrant notes of stone fruit, pine and refreshing citrus dazzle the palate before making their exit in a graceful dry finish that argues convincingly for a follow up sip. Its the sum of our (current) IPA brewing wisdom, and it also happens to pair wonderfully with those veggie pakoras a couple of aisles over.

We started this absurdly tasty DIPA with a hefty malt bill of Weyerman Extra Pale Premium Pilsner, white wheat, chit, and a whole lot of rolled oats. Then, we hopped the living hell out of it with Nelson, Mosaic, and Amarillo, yielding a hazy marvel bursting with juicy pineapple, mango, white grapes, and stone fruit, with a light floral character on the finish. We’re pretty frickin’ psyched about this one, and we’re relatively confident you will be, too.

Aurora is a 6.7% ABV red rye IPA loaded with Equinox, Centennial, Motueka, and Experimental Hop 07270. This pungent, complex IPA marries the spicy malt character of rye with the fruity dankness of new wave American & New Zealand hops. Aurora pours a gorgeous ruby red, making it the perfect IPA for Fall (if it ever comes to San Diego).

It’s so great that you like coffee. I just love that about you. Speaking of which, you’re holding an oatmeal coffee stout positively redolent with coffee aroma and flavor. It’s not acrid. It’s not astringent. It doesn’t taste like that brown puddle at the bottom of the office carafe at 4pm. It kind of tastes like chocolate covered espresso beans, only drier and more like beer. It’s the full-blown coffee beer experience in a sessionable-ish package.

The best thing about Nitro Black House is that it is noticeably different in flavor and aroma than regular ol' Black House. The flavor is bright and snappy with a big chocolate/ coffee aroma, and the trademark super smooth, creamy mouthfeel and lingering head of a true nitro beer. It's goddamn delicious, and definitely worth trying side-by-side with regular Black House. If I were to say it is "hella crushable, brah", I would not be lying.

The stunningly delicious progeny of a joint effort with the lovely folks at Threes Brewing, this Baltic porter sports a malt bill of Mecca Grade Metolius, Bohemian Pilsner, Mecca Grade Shaniko, chocolate malt, Midnight Wheat, and a pinch of oak Smoked malt. We then added some Hallertau Mittelfruh to the boil in three separate additions to give it a touch of bitterness and bit of spice.

This is the first commercially bottled barrel aged coffee beer in the world (that we know of!)

Modern Times Beer - Creature Times
Style: Sour or Wild Ale

Modern Comforts is a collaboration with our friends at Modern Times in San Diego. For this massively hopped Double IPA we used Citra and Mosaic hop pellets, CO2 hop extract, and lupulin powder from YCH Hops. Using all three of these hop products, and putting our minds together with our west coast friends, we absolutely saturated the hop flavor and aroma in this beer. Modern Comforts pours a pale golden orange color with an off white, pearl foam. Upon pouring, we get citrus zest, blueberry, fresh squeezed orange juice, tropical fruit and some light floral notes. The flavor turns it all up a notch moving into earthy, melon rind, pineapple, and more tropical fruit notes that finish with a medium bitterness. It’s a love letter for the hop head consumer from a couple hop head breweries.

The result is a blast wave of pineapple, papaya, and pink grapefruit over a crisp, restrained malt bill, before wrapping up in a soft, round finish that leaves you with warm feelings and an intense desire for another sip.

This beer was the result of aging our funky rye grisette in both our Amphorae, along with Tempranillo and Sauvignon Blanc wine must added to each clay fermenter. We racked the results onto a bed of Blackcurrant and Zinfandel grape must for an extra layer of fruity complexity. The resulting beer pours a garnet red and has notes of ripe berries, whole-cluster red wine, and a drying minerality.

As with everything we do, we aimed for a harmonious union of these two complex flavors—rather than a sledgehammer of just one flavor—and we feel like we achieved it.

This ultra-crushable fruit party began with a malt bill of 2-row, flakes wheat, and white wheat malt, which was kettle-soured and does with heaps of blueberries and poms, and recirculated through precious vanilla beans. The end result is an incredibly refreshing beverage with big notes of blueberry, cherry, and strawberry up front, followed by a beautiful vanilla character that takes the whole shebang right over the top.

This unbelievably refreshing beverage started with a malt base of German pilsner, honey malt, & flaked oats and was subsequently hopped with Citra, Centennial, & Chinook, yielding an inordinately tasty 4.8% crusher with notes of tangerine, strawberries, & a cool hint of pine. It's more than a match for any heat summer can throw at you.

Modern Times Beer - The Fruitening Part 2
Style: Sour
ABV: 6.40% IBU: 15.0

Part Two we began with the same glorious barrel-aged blend used in Part One, but this time it received a heavy-handed dosing of plums, boysenberries, and blueberries. In case you didn't feel this immense amount of fruit was enough, we ended up blending in a bit of the Zinfandel and blackcurrant version as well, yielding stunning layers of jammy complexity. All together, it's around 3/4 lb of fruit PER PINT.

The resulting beer is delightfully refreshing and intriguingly complex, with a profile that's rustic, spicy, and peppered with notes of hay and pastoral funk that rest lightly on a crisp, lemony acidity. We tried a few new things with this tropical juggernaut, and we are extremely glad we did. For the malt bill, we added a huge dose of wheat to the malted and flaked oats, and rounded the whole thing out with a touch of honey malt for sweetness. Then, we hopped the living shit out of it with Strata, Comet, Nelson, and Sabro. The result is a straight-up magical hazy boi with notes of white grapefruit, tropical fruit, and white wine. Radiance, indeed.

This wildly delicious send-up to the classic Belgian Pale is a testament to why the style is so universally beloved. Sessionable yet stunningly complex, the Belgian yeast absolutely sings over a subtle, herbal hop bill before wrapping up in a clean, dry finish. The moderate ABV is a serious bonus, because you're probably going to want another one.
