	Pacific Rim - 2012 Riesling Style: White Wine ABV: 11.50% The sweetness gauge on the back label indicates this as medium dry, and at 3.2% residual sugar, there is more than a hint of sweetness. It’s all in fine balance, full flavored, fruity and round. A mix of peaches, apricots and Mandarin oranges makes this an interesting Riesling with some complexity.

	Pacific Rim - 2015 Riesling delete Style: Riesling ABV: 8.50% Hailing from Columbia Valley, WA, this sweet riesling has somewhat subdued aromas of jasmine, herb and orange peel, followed by plentiful medium-sweet stone-fruit flavors. The finish lingers. It delivers a lot of enjoyment.

Pacific Rim - Dry Riesling
Style: White Wine
ABV: 12.50%

We pick our grapes relatively early (22-23 Brix). The Riesling juice is fermented at cold temperatures for 30 days and then aged in stainless steel tanks on its lees for 6 months. We leave our dry wines sur lie post fermentation for five months and we stir the lees once or twice a week. All our Rieslings are fermented with native yeasts. We use no oak and no malolactic on this wine – it’s as pure and unmanipulated as it gets.

	Pacific Rim - Eufloria Style: Sparkling Wine ABV: 12.50% This wine is a secret blend made from the finest aromatic grapes grown in Eastern Washington. The grapes are gently handled and fermented for 30 days. The slight residual sugar in the wine is natural and comes from arresting fermentation. The wine is aged for 6 months and the carbonation is added during the kegging process.
