Brewed with honey malts and citrus-forward hops that create floral, sweet aromas, this is a collaboration beer created by Black Star Line Brewing Co. and brewed by Ponysaurus Brewing Co. All profits of this beer will be donated to help rebuild Black Star Line Brewing Co. and support their craft beer movement.

	Ponysaurus Brewing Co. - Apricot Style: Sour ABV: 4.30% IBU: 24.0 The Apricot Sour delivers bright bursts of tart peach skin, lemon curd, and pastry. With funky aromas of vanilla and caramel, this fruited sour is a favorite for seasoned sour drinkers and sour novices alike. It has the flavor of mouth puckering, lightly sweetened lemonade with a hint of apricot and a lactic finish.

Ponysaurus Brewing Co. - Biere de Garde
Style: Biere de Garde
ABV: 6.30%

An homage to higher-gravity French farmhouse ales, Biere de Garde roughly translates to “beer for keeping.” Our version reflects the historical realities of this style of farming, when brewers made do with what was on hand. With three types of barley, wheat, rye, and oats, its aroma smacks of apple, pear, almond, and vanilla, with just a hint of lemon rind.

Our Counter Culture Coffee friends inspired a collaboration that combines their complex, chocolatey Hologram coffee with our robust Baltic Porter. 40 gallons of flash brewed iced coffee and 18 pounds of whole beans infuse a rich coffee flavor, making the Counter Culture Coffee Baltic Porter a balanced blend of coffee and beer with notes of toasted almond and mocha.

	Ponysaurus Brewing Co. - Export Stout Style: Stout ABV: 6.20% IBU: 23.0 Most beer drinkers are familiar with the Dry Irish Stout, popularized by a certain brewery in Dublin. The Export Stout is a somewhat bigger version of this beer made to survive oceanic travel, yet still retain the dry, roasted flavors of the original without out being too sweet or cloying.

Thanks to a dash of local liquid gold, our Honey IPA swarms your tongue with notes of lemongrass, apricot, & honey biscuit. Floral sweetness balances the bitterness of El Dorado & YQH1320 hops. You could say it’s the bee’s knees. But you’re not 100 years old. Hop information: Hopped with El Dorado & experimental YQH1320 hops from our hop farming friends at CLS Farms & Yakima Quality Hops in Washington state. The beer bees would drink if bees could drink beer.

Created in the 18th Century by British brewers for the kinda scary Czars of Russia, the Imperial Stout was designed to be dark, strong, and hardy enough to handle the long and perilous voyage across the Baltic Sea. Recently ago, dos gringos from North Carolina traveled to the exotic worldwide web to learn how to craft a pretty darn legit Mexican-style lager. Our Inauthentico Mexican-style Lager is the result. Smacking of masa, with notes of lemon-lime and honey, our cerveza might be native to the land of college basketball and medical research but, all told, we think it’s mighty bueno. (Did we say that right?)

Style: India Pale Ale
ABV: 6.30% IBU: 33.0

For our IPA, we used the traditional West Coast India Pale Ale as our template, then forgot where we put the template, then created something completely different. It’s a simple, easily enjoyable IPA with a crisp bouquet of lemon citrus, grapefruit rind, and melon. Tangerine and passion fruit dominate the hop flavor, but without the usual overwhelming bitterness.

You didn’t ask for purple beer, but boy did we deliver. For the second beer in our Experimental Brewing Series with our pals Spaceway Brewing Co., we created a delightfully crushable summer beer: a Lemon Cucumber Sour. This ale was brewed with precisely 12 fresh cucumbers, lots of lemon zest, Philly Sour yeast & bright butterfly pea flower to give it that perfectly purple hue. With notes of lemon candy, cucumber, and floral tea, this ale is a collaboration that brings balanced sweetness with pleasant tartness in a glass

	Ponysaurus Brewing Co. - Oyster Saison Style: Saison ABV: 6.40% IBU: 30.0 Brewed originally in collaboration with Durham’s St. James Seafood Restaurant and Raw Bar, this dry, hoppy Oyster Saison is the perfect ode to the sea. 50 pounds of fresh, whole oysters infuse a whiff of ocean breeze, along with underlying notes of minerals and brine.

The trifecta of soft local water, revolutionary malting techniques, and local Saaz hops created the most recognizable beer style today. Bready flavors mixed with an herbal undertow make this beer an instant classic.

Style: Belgian Strong Dark
ABV: 9.30% IBU: 24.0

The result of our finest brewing efforts, the Ponysaurus Réserve is a Belgian Dark Strong Ale featuring rich brown malts and Belgian candy syrup made in-house. Flavorful Belgian yeast yields a complex yet elegant set of fruit and floral notes, while the candy syrup ferments almost completely, resulting in a scarily drinkable beer clocking in at just under 10% ABV.

Reflecting the Scottish tradition of brewing beer with a small amount of hops so as to avoid unnecessary interaction with British traders (the bastards), our Scottish Ale is a rich, smooth, malt-focused beer that pours incredibly dark. Nutty Marris Otter malt provides deep hits of caramel, coffee, and chocolate in both the aroma and flavor. Like a drinkable kilt for your gullet.

For this summer 2022 SMaSH beer – a Single Malt and Single Hop ale – we used Plummage Archer malt & some incredible newly-discovered YQH Experimental hops from one of our hop friends in WA! While in the Pacific Northwest, our pal & owner of Yakima Quality Hops Tim discovered this variety of hop growing while on a hike. He plucked this wild hop, cultivated it, & shared it with few lucky breweries – including us – to brew something fun to learn more about this brand new hop. We're so pumped – & most just honored – to be part of the sensory researching & most importantly beer tasting phase. Cheers to new discovery & endless beer possibilities!

The beer features Idaho #7 hops, with ample amounts of hops added in the kettle and in the fermenter.

Ponysaurus Brewing Co. - Tripel
Style: Belgian Tripel
ABV: 8.20%

The Tripel is a strong, light-colored Belgian-style ale. The origin of the name comes from the Trappist tradition of marking bottles with a single, double, or triple "X" to indicate the strength. While the original "tripel' would have likely been dark, the modern interpretation was established in the early 20th century by Westmalle, whose beer provides the standard by which all others are judged.

	Ponysaurus Brewing Co. - Weissbier Style: Wheat ABV: 4.70% IBU: 30.0 A celebration of traditional German wheat beers, our Weissbier features the classic banana and clove flavors, with the refreshing tartness and citrus notes that can only be found when the beer is at its freshest. We serve the beer cloudy on purpose, as the suspended yeast is crucial to its overall impression.

What do you get when you cross the flavor profile of a refreshing Belgian Witbier and the hoppiness of an American IPA? Our White IPA, that quenches beer-thirst with its tasting notes of lemongrass, orange peel, and tropical fruit. In the end, this beer has a light malty backbone with lingering flavors of fresh hops, melon & citrus.
