Composed exclusively of pineapples sourced from my second cousin's plantation in Costa Rica, piloncillo from the Mexican state of Michoacan and a furtive selection of spices, this lightly alcoholic elixir is sure to please your palate. Much like American Apple Pie, there is no recipe for Tepache. It is a traditional Mexican drink, frequently consumed out of a plastic baggie with a straw, sold by street vendors in Jalisco and made at home. It's not a cider - NO APPLES! The fermentation happens on the scales and rind of the pineapples, imparting a deep and unique flavor. This beverage is low-alcohol and sweet like a Summer Shandy or Radler due to a partial fermentation of the pineapples.

The making of Hallelujah Hopricot starts with heirloom American apples as a Belgian wit-style cider steeped with coriander, bitter orange peel and paradise grains, fermented with French saison and Belgian ale yeasts. On top of that rich base, I add apricot juice and finish with whole-leaf Cascade and Amarillo hops. A fresh and fruity concoction not dulled by any sweetening, this off-dry cider is my best-seller, and for good reason.

Reverend Nat's Hard Cider - Hallelujah Hopricot

When you first pour a glass of it, you’ll notice a robust aroma of equal parts apricot and hops. After trying dried apricots, apricot puree, whole apricots and more, we decided on an apricot juice. And the hops are Amarillo, Cascade and Chinook. We use whole-leaf hops (not pelletized) and “dry hop” the cider by soaking the hops in the finished cider just prior to bottling. The hops we’re using smell and taste citrusy, with grapefruit and lemon and hint of pine. These delicate aromas dissipate over time and if they’re not treated gently so the cider stays cold from the moment the hops are added until you pick it up off the shelf. If you dive deep into the flavors, you might notice more going on. There is a lot of complexity underneath the apricot and hops including multiple yeasts and wit beer spices.

Reverend Nat's Hard Cider - Revalation: Newtown Pippin

I call this cider Revelation Newtown Pippin, and is the one year-round in my Revelation lineup. I carefully selected a white wine yeast to let the particulars of the Newtown Pippin apple shine through. No other apples were used, making this a single varietal. It doesn't end there since we let this cider age for at least four months to develop flavors not found in immature offerings.

Reverend Nat's Hard Cider - Revival

We ferment this dark base to all the way to dry using two exotic yeast strains: a beer yeast known for the round mouthfeel in Saisons and a rarely-used secret culture which produces aromas of pineapple, guava and peaches. This cider is brilliantly golden in color and deeply complex while remaining subtly familiar, with just the right amount of sweetness and acidity to be an everyday beverage.

Reverend Nat's Hard Cider - Sacrilege Sour Cherry

German Berliner Weisses, and Flemish reds whilst simultaneously creating a horrific flaw in ciders called “gerbil cage”. But I have unlocked the mystery of producing a sour, mouse-free cider using only lactobacillus with apple and cherry juice, and I have named it Sacrilege Sour Cherry. If you’ve ever had a kreik lambic, expect that. Do not expect apple juice. This is a cherry cider like none you have ever tasted.
