Rip Current Brewing - Ankle Breaker Alt.

his style is a German ale style harkening back to the days before lager yeast was isolated (discovered). Our Altbier follows the traditions used even today in the Dusseldorf region of German. This amber colored beer has a smooth bready backbone with some fruity flavors all balanced with noticeable bitterness. This Alt is a very sessionable, balanced beer for those enjoying a smooth malt character. Our recipe was won 1st place at 2012 AFC, 1st at a big mid-west competition and 1st at the CA State Fair plus 2nd at the 2011 CA State competition.

Rip Current Brewing - Ankle Breaker Sticke
Style: Altbier
ABV: 6.70%

A "Sticke" Alt is a special "secret" (sticke means "secret" in low German) version of the northern Dusseldorf Alt style beer packing more flavor and a higher ABV. Some breweries call the "Sticke" Alt an Imperial Alt due to its higher ABV and flavor profile. Traditionally, the breweries around Dusseldorf brew their Sticke Alt twice a year to thank their local patrons but don't generally advertise its availability to tourist making it a rare to find. The Alt (which means "old" in German) style harkens back to the "old" days before lager yeast was isolated when Germans' didn't realize the Alt was using a more ale-like strain of yeast. The Alt yeast is fermented cooler then typical ale yeast to bring smoother lager-like flavors with less fruity notes. Our Sticke Alt is 6.7% and features rich biscuit and dark bready backbone with some light fruity yeast derived flavors. This 10% ABV ale is an example of the very strong, export-style Scottish ales popular in Scotland (although much is exported to the US). It leads with a big citrus nose and quickly turns to a massive citrus and fruity flavors that lingers thru the mid-palate until the dry and bitter finish. Good luck looking for the light bread character in the mid palate, I'm sure its there somewhere! This beer is for the serious hop lovers so we didn't hold back on the hops at any part of the process.

This Imperial Oatmeal Stout is a classic roast forward Russian Imperial Stout with a twist. We added a substantial portion of oats for mouthfeel and lactose to add in sweetness. If that wasn't enough the final beer was aged on organic cocoa nibs to impart a pleasant but not overpowering dark chocolate character. The resulting beer has a perfect balance of sweetness, roast character and bitterness to be easy drinking despite its formidable ABV.

Style: Chocolate Stout
ABV: 5.70%

sweet (milk) stout aged on a free-trade, organic Ecuadorian cacao nibs which impart a complex de-bittered chocolate flavor which we soften with vanilla and the lactose showing through from the underlying sweet stout. The resulting beer is a great drinkable, low alcohol desert beer that is a favorite particularly those with a sweat tooth. This beer was our first collaboration with a homebrewer.

This 7% blonde ale has an unexpected combination of light fruits (banana, citrus) with hints of black pepper in a cocoa base. Its easy drinking and has a semi-sweet yet not sugar-like cocoa finish.

We used authentic ingredients and a traditional Trappist abbey yeast strain to create our version of this trappist ale.

This beer uses hops from the southern hemisphere (motueka, pacific jade) to impart a more tropical fruit character. We included a smaller proportion of Amarillo hops from the PNW of the US to provide some citrus and piney character to round out the flavor palate. Unlike our other hazy IPA, we fermented with an experimental yeast that is known to create unusual fruity esters including pineapple and lemon.

This straw colored, 6.5% ABV San Diego Style IPA is lighter in color and lower in ABV and bitterness then our Lupulin Lust IPA. Impact Zone features flavors and aromas from our extensive use of New Zealand and Australian hops. These hops impart a passion fruit, tropical fruit with just a touch of background citrus character. The mid-palate is smooth and lightly bready with a clean finish that is dry and refreshing with noticeable, but not overpowering bitterness.

This 10% ABV Imperial Coffee Porter is the base beer we used when making Vanilla Storm. We really like the big Kona and Sumatra coffee flavors of this beer and want to give you the opportunity to try it along side Vanilla Storm. We picked our coffee blend to provide a rich, complex, dessert-like flavor profile that complements the base Imperial Porter. We used a technique known as "cold steeping" to bring out the coffee flavors without introducing burnt, acrid or heavy roast flavors common in other coffee beers.

Big, hoppy, San Diego-style IPA. This flavorful IPA boasts big lemon, grapefruit and tangerine aromas and flavors with some pine-like notes rounding out the experience. The background is lightly bread providing support for the massive hopping while the finish is smooth and dry. Beware of this beer as its 8.2% ABV, but doesn’t taste like it. Don’t be surprised to see this batch go quickly despite being done on the 15 barrel system.

This 4.8% German-style Berliner Weisse is a lactic sour (tart) beer fermented with mango puree and then dry hopped with the tropical fruity Mosaic hop! This edition of our "tart series" leads with a pleasant mango aroma and flavor and is followed by notes of stone and citrus fruit from the dry hopping in the mid-palate. The finish has a nicely balanced lactic tartness that brightens up the fruit flavors inviting the next sip.

This beer highlights the balance of banana and clove-like flavors created by using traditional German Hefeweizen yeast. The background is bread-like (wheat bread of course) with some toast-like flavors. As you would expect of a German Hefeweizen, Marine Layer is served cloudy. This adds to the mouthfeel and flavors, due to the remaining residual yeast and wheat starches. Another one of our great summer day beers!

Style: New England IPA
ABV: 6.50% IBU: 52.0

New England style - hazy IPA has a complex assortment of juicy citrus (orange, grapefruit) and tropical fruit (papaya) character in the nose and flavor. The mid-palate is fruity sweet and it finishes semi-dry with very low bitterness for a hoppy beer. We used citra hops, Idaho 7 and Mosaic hops in this beer at the end of the boil and repeated with dry hopping to maximize the tropical fruity flavors.

The primary hops include Galaxy from Australia and Amarillo from the US. The base grain bill focused on light colored and less candy sweet (Crystal) character as the name suggests. This west coast-style pale ale uses two very popular proprietary (so hard to obtain) hops from the Pacific Northwest: Mosaic and Amarillo. Both of these great hops impart a nice fruity character with some pine-like notes as well in the aroma and flavor. Just to amp it up a bit more, we dry hopped the beer with even more of these great hops. The mid-palate is smooth and fruity leading to a dry finish with light bitterness to balance the sweetness of the base malts.

We designed this beer to appeal to the hop lovers! This 9.2% Imperial IPA offers a big grapefruit, lemon, and citrus character, with woodsy background notes. We add huge additions of Centennial, Simcoe and Columbus hops throughout the brewing process, yet it's still quaffable by the pint (or more!) Red Flag has a light body and a super dry finish, with noticeable but not overpowering bitterness.

Style: Russian Imperial Stout
ABV: 11.20%

An 11.2%, massive Russian Imperial Stout! It offers complex, rich dark bread, fruits (plum, fig, raisin) and dark sugar-like flavors. The mid-palate is soft and malty sweet, leading to a roasty finish. Somewhat bitter and slightly warming, reminding you the size of the beer. We've added oats to the beer to give it body, and used molasses, honey, and dark sugars to give it more complexity.

This 9% ABV Hazy Double IPA is a scaled up version of our popular Sticky Shenanigans using the same hops and general grains, but taking everything to the next level! We used Simcoe from the Pacific Northwest combined with massive amounts of New Zealand 's most sought after hops Nelson. This combination of hops creates bursting aromas and flavors of juicy tropical fruits with hints of pine.

Rip Current Brewing - Take Off Tripel
Style: Belgian-Style Tripel
ABV: 9.10% IBU: 29.0

This classic Belgian-style Tripel highlights the fruity (citrus like) and somewhat spicy (black pepper) flavors from the yeast on a soft light bready background. The finish is dry and crisp inviting another sip. Despite the high ABV, this beer is very easy drinking and is sure to please the Belgian beer lovers in your customer base.

Rip Current Brewing - Tina, Drink Your Haze!
Style: New England IPA
ABV: 6.50%

This 6.5% ABV "New England-style" hazy IPA features an assortment of juicy tropical and stone fruits in the aroma and flavor with notes of citrus rind. The mid-palate is fruity and finishes semi-dry with very low bitterness for a hoppy beer. We used the new Idaho 7 hop as the lead actor with a supporting cast of Galaxy and Southern Cross from New Zealand. See if you can figure out why we used this name.

Style: Rye Session IPA

This 4.5% rye ipa offers a complex rye spicy background which peeks through the massive amount of hop aromas and flavors we expect from a west coast style IPA. Tube Rye-der uses extensive amounts of New Zealand hops to provide a passion fruit/tropical fruit oriented flavor backed with some US northwest citrus flavors. While low in alcohol (thus sessionable) the beer gives IPA lovers all the hops they need to get through the first few pints.

This 10% ABV Imperial Porter is aged on our custom blend of fresh Kona and Sumatra coffees, combined with Madagascar vanilla beans. We picked our coffee blend to provide a rich, complex flavor profile while not contributing acrid coffee flavor or acidity. We spared no expense using fresh Kona coffee delivered directly from the farm in Hawaii, and the most flavorful vanilla beans we could source. We don’t expect to have this available for very long, so don’t wait to try it.

Rip Current Brewing - Western Swell Weizenbock
Style: Wheat Bock
ABV: 8.30%

This 8.3% ABV traditional German Weizenbock (Wheat Bock) offers a rich, complex flavor profile combining the dark bread, dark fruit (plum, raison) flavors of a German Bock beer with the background banana/clove and dough-like character of a Hefeweizen. Like other German wheat beers, this beer pours cloudy and is dark like a bock. Despite the high ABV, Western Swell is very smooth and easy drinking in part due to our softening of the water profile and brewing process (step mashing and cold fermentation).

Rip Current Brewing - What Would Dave Drink?
Style: Belgian Strong Ale
ABV: 9.80%

Dave Levonian was an award winning QUAFF homebrewer and beloved friend to all. His passing in 2008 left our hearts full of great memories and recipes including this beer. This 9.8% Belgian-style Dark Strong leads with dark fruit-like aroma and flavors (plum, fig, date) followed by dark bread and chocolate-like notes. The finish includes some black pepper like spicy notes from the traditional Belgian yeast.
