Style: American IPA
ABV: 7.20% IBU: 65.0

Our American IPA gets its bold hop flavor from 100% American hops and its deep gold and full body from pale and crystal malted barley. A blend of Amarillo, Centennial and Simcoe hop varietals imparts AIPA with bitterness and prominent aromas of citrus and fruit. Our brewers select these hops on an annual pilgrimage to the hop farms of Pacific Northwest.

Schlafly Beer - Barrel Aged Imperial Stout
Style: Imperial Stout
ABV: 10.50% IBU: 40.0

Our Bourbon Barrel Aged Imperial Stout is complex and strong, with rich chocolate and roasty flavors. The beer is brewed to have big malt flavor and hop bitterness to balance the sweetness of the high alcohol content. After primary fermentation and conditioning, the beer is transferred to freshly-emptied bourbon barrels and aged for several months before being carbonated and bottled.

	Schlafly Beer - Berliner Weiss Style: Berliner Weissbier ABV: 4.00% IBU: 5.0 Our take on a Northern German traditional Berliner Weisse, a cloudy sour wheat beer that is light in alcohol and low in bitterness. The lactic sourness dominates with hints of fruit. Berliner Weisse is commonly served with fruited syrups to help cut the acidity.

	Schlafly Beer - Caraway Style: India Pale Ale ABV: 7.20% IBU: 65.0 Adding seeds to beer is something we’ve long wanted to do, and toasted caraway has the elegance to do it well. Earthy, licorice-like flavors balance well with the strength of Chinook and Cascade hops; caramel and rye malts add a strong, sweet-malty character, all combining to present an harmonious union.

	Schlafly Beer - Christmas Ale Style: Winter Warmer ABV: 8.00% IBU: 30.0 Our Christmas Ale is a warming winter ale that blends the spices of the season with sweet caramel malt. Orange peel, juniper berries, ginger root, cardamom and cloves are added for spiciness. We use honey in the fermentation process, which raises the ABV without producing too much heat from the alcohol content.

Our Coffee Stout is a classic combination of a traditional stout and premium French roast coffee from St. Louis roaster, Kaldi’s Coffee. Roasted barley and coffee dominate the aroma, with the sweetness from the stout balancing the acidity of the coffee. We use a unique cold toddy extraction process to brew a less acidic coffee for the beer.

Darkness and romance lurk beneath the golden exterior of this ale that combines the prominent flavors and aromas of coffee and the smooth richness of chocolate. After the beer is fermented, we let it rest on cocoa nibs sourced from Ghana—one of the world’s largest chocolate exporters. In the final stage of production we add a cold coffee toddy made from ground beans roasted by Kaldi’s Coffee.

Highlighting the recognizable notes of the French yeast strain and the boldness from the USA’s most notable hops, this innovative beer offers complexity and intrigue where it’s least expected. Our dry-hopping process is crucial to this IPA: we use the Centennial variety for both bitterness and tones of floral and citrus, and Mosaic hops for its distinct aromas of fruit, herbs and pine.

	Schlafly Beer - Hard Apple Cider Style: Cider ABV: 7.20% Schlafly Hard Apple Cider is just the right balance of dry, crisp apple flavor with a bit of sweetness in the finish. This is a great beverage akin to a champagne and not as sweet as some of the ciders on the market today. We use a blend of three different cultivars to get the right balance of tartness and sweetness in this cider. Enjoy!

Kettle soured with lactobacillus and aged on oak chips before the final blending. The American ale yeast adds a clean finish for the beer. “This is a sour that you’ll want to write home about,” Founding Brewer Stephen Hale says. “With low bitterness and the mixed fermentation, the Sour Blonde Ale is fruity, tart and complex. It’s understated, but also unexpected.”

Our Oatmeal Stout is a classic British-style stout brewed with flaked oatmeal and roasted barley. Freshly-roasted coffee beans, cocoa and touches of raisin and dried fruit dominate the aroma of this super-dark ale. The richness of the grain blend is balanced by the nutty character of the roasted malt, the creaminess from the oatmeal flakes and a dose of hops.

Our Raspberry Hefeweizen is a true fruit beer, not a fruit-flavored beer. We add pureed raspberries to our Hefeweizen during the primary fermentation process. Although we add no sugar, color or flavors, the resulting beer is a hazy pink color, with citrus aromas from the wheat and a flavor that is neat and tart. While this beer is low in bitterness, it is not overwhelmingly sweet, making it a thoroughly drinkable beer for the season.
