This double IPA owes its considerable oomph to a quartet of Australian hops—Topaz and Galaxy, plus newcomers Ella and Vic Secret. We also had Fairview malt shipped in from Australia just for this brew. This Odd Year addition was brewed in the authentic, historical style of an imperial russian stout, but with the addition of several hundred pounds of espresso beans from our friends at Ryan Bros. Coffee. Actually, this could be considered historically accurate, since the Russian nobility were as fond of earthy breakfast beverages as they were of hearty dark beers. Catherine the Great herself bolstered her finesse for ruling an empire by drinking five cups of black coffee every morning during her lengthy reign. While we couldn’t fit five cups coffee in every bottle of this darkly delicious libation, we assure you that the deep, rich espresso flavors are unmistakable and meld beautifully with the roasty bitterness of the dark malts. Catherine would have whole-heartedly approved.

The Stone 08.08.08 Vertical Epic Ale is a strong Belgian-style IPA highly hopped with American hops (Ahtanum, Amarillo and Simcoe). The aroma is full of depth: nuances of pepper, clove, and banana from the Belgian yeast strain, and the resiny citrus notes from the American hops blend together nicely to provide a complex aromatic character. The taste is spicy, hoppy and fruity, with a bitter end.

For our 6th anniversary in 2002, we extended this concept by making an intensified version of Stone Smoked Porter. We cranked up the malts and hops a notch or three and conditioned it on French and American oak, which accentuated our porter’s distinctive smokiness and amplified its chocolate and roast coffee flavors while also adding subtle notes of toffee, cherries, dried berries and vanilla.

It’s a middle finger to the haze craze proving that clean, crisp IPA’s can still be smashed full of big, juicy, tropical flavor. Citrus takes the forefront, with plenty of fruit character to back it up. With incredible mouthfeel from the malted oats, the beer isn’t sweet at all, but its light amber color would make you think it is sweeter than it tastes.

The coffee notes in Stone Americano Stout are bold, rich and full of American swagger. For each 120-barrel batch, we incorporated over 250 lbs. of artisanal espresso-roast beans into the mash and added in Columbus, Chinook, Amarillo and Cascade hops to invigorate the coffee taste with a slight citrus and resin hop presence. When it came time to selecting our coffee, we chose the same local roasters who contributed to our sought-after 2013 Stone ESPRESSO Imperial Russian Stout. Their fantastic beans helped us achieve this dark, hoppy and wonderfully aromatic espresso stout.

I awake from a slumber that’s been anything but peaceful. I don’t take kindly to idling and I am anything but neutral. Life has nothing to do with killing time, and the knowledge that months have passed since the onset of my sequestering in this pitch-black oaken tomb (albeit a barrel flush with brilliant aromas of vanilla and char) does not sit well. But then comes a tingle followed by rejuvenating warmth, signs that something is different…something has changed…and for the better. I feel stronger yet somehow more nimble and refined. I feel even more self-assured, and my vision for what is good and right, honest and true, is as laser-sharp as the brawny, bawdy, liquid Arrogance that shall further advance my battle against all things mediocre and geared toward the lowest common denominator. There’s a lot going on in this beer! We took an Imperial Saison, added 17% peach juice, 3 strains of Brettanomyces yeast, souring organism Lactobacillus brevis, and put all of that into wine barrels for about 9 months. An already magnificent beer’s mouthwatering recipe of unsweetened chocolate, flaked oats and dark-roasted malts is made even more deliciously complex care of oak barrels that previously nurtured bourbon. n 2006, Chris Carroll, a longtime member of Team Stone, took that adage literally, proposing that we produce a one-off version of our venerable Stone Smoked Porter made spicy from the addition of chipotle peppers. We gave it a shot and found that those smoked jalapeños melded quite naturally with the smoldery peat-smoked malt that gives the beer its flavor and moniker, creating a deep, roasty quaff with a carefully restrained tingle of tasteful capsaicin heat in the finish.

Stone Brewing Co. - IPA with Blonde Roast Coffee

We used just over one pound of whole bean Ryan Brothers San Diego Sunrise Coffee per barrel in a bright tank of Stone IPA. Aroma is of coffee and citrusy hops. First taste is of milk and dark chocolate coffee notes, and lemon peel hop bitterness. Probably the most straight forward coffee beer we have ever made, although still complex and very coffee forward! The finish on this beer is exceptionally long, and expect an aftertaste of mocha coffee and citrus to linger after you finish a pint.

Stone BELGO Anise Imperial Russian Stout is brewed as part of Stone's "Odd Beers for Odd Years" program—which introduces "odd" versions of their classic beers in odd years (2011, 2013, 2015…). It begins as the rich, dark, intensely aromatic Stone Imperial Russian Stout, but is then fermented with a Belgian yeast strain, and tweaked with star anise and oak chips, adding a lingering blend of vanilla and licorice notes to the palate.

This Odd Year addition was brewed in the authentic, historical style of an imperial russian stout, but with the addition of several hundred pounds of espresso beans from our friends at Ryan Bros. Coffee. Actually, this could be considered historically accurate, since the Russian nobility were as fond of earthy breakfast beverages as they were of hearty dark beers. Catherine the Great herself bolstered her finesse for ruling an empire by drinking five cups of black coffee every morning during her lengthy reign. While we couldn’t fit five cups coffee in every bottle of this darkly delicious libation, we assure you that the deep, rich espresso flavors are unmistakable and meld beautifully with the roasty bitterness of the dark malts. Catherine would have whole-heartedly approved.

Style: Belgian Strong Ale

2015 marked the seventh year of our American Homebrewers Association-sanctioned Stone Homebrew Competition. Juli Goldenberg, this year’s winner, added carrots, raisins, cinnamon and more to a Belgian-style golden strong ale to create a beer that is the liquid embodiment of carrot cake. As the name implies, this beer is richly aromatic and envelopes the palate with decadent flavors of cream cheese frosting, cinnamon, vanilla, carrots and raisins plus subtle malt sweetness, ending with a medium-dry finish. It’s nothing short of brilliant and well deserving of the 24 karat (carrot?) golden opportunity to be brewed by Stone and distributed across the country.

Liquid Compass emulates the same New World profile as the Aviation gin. Sweet orange peel, whole juniper berries and coriander seeds are added to the beer post-fermentation. These combined with the citrus and tropical hop character give the beer an intense citrus flavor, with an emphasis on orange notes. The finish is sweet and malty with massive hop and botanical character.

At first we were super bummed when a bunch of barrels of barrel-aged Xocoveza inexplicably soured. Then we tasted it. Turns out that the souring microflora transported our bourbon barrel-aged mocha stout to crazy new depths. The sourness marries magnificently with the toffee-like richness and oak vanillin character from the barrels and the chocolate, coffee and spice flavors of the base beer. However, they are simply just an accent to this still predominately coffee brew.

For this creation we used our semi-traditional sour base beer made with aged hops and unmalted grains. The beer was combined with Titania Black Currants, Black Diamond Blackberries and Marionberry Blackberries, then barrel-aged with Lactobacillus acid-forming bacteria and Brettanomyces claussenii yeast for 15 months.

Amarillo, Citra and Mosaic hops elicit a fresh-squeezed OJ quality, in a combination of pellet hops and cryo hops for more clean flavors and less roughness.

Two batches of an IPA were brewed and expertly blended to craft this multilayered beer. The first batch was split down the middle, with 50% being aged in gin-infused bourbon barrels and the remaining half aged in rye whiskey barrels. These beers were blended with the fresh second batch of IPA, which was generously dry-hopped to impart rich aromas to accompany the citrusy, piney, woody, herbaceous flavors achieved from this truly one-of-a-kind collaboration.

Dry-hopped with Mosaic, Cascade and Amarillo hops, this beer is incredibly citrus-forward, rounded out with biscuit and toffee notes. We think you’ll find this red IPA to be quite deliciously satisfying, no matter how you choose to pronounce it.

This hoppy, deep amber hued beer was created to shine a light on rare, unexplored grains seldom used in the brewing world. In addition to barley, wheat, rye and triticale, we added malted millet and malted buckwheat to bring the total unique grain count to nine. The earthy, nutty notes of granola found in this experimental multigrain malt bomb are complemented by the citrusy, piney flavors of four classic American hops. We dry hopped the beer with Cascade and Centennial hops at the end, adding more citrus notes and rounding out the grain bill’s rich, bready character.

Our tartly refreshing, kettle-soured Stone Berliner Weisse gained its orthodox sour and acidic character from a specially selected Lactobacillus strain sourced from local Berlin cultures. We upped the ABV to a healthy 4.7% and hopped the beer with new German varieties, Huell Melon and Callista. Brewed with Red Wine grapes from our friend Jon McPherson and 4 strains of Brettanomyces yeast. Malty and vinous aromawith aromatic notes of black pepper and flowers from the Brettanomyces fermentation. Oak is present but subdued in the flavor, but the wine grape flavor is intense,contributing complex red fruit flavors such as cherry and raspberry, and marries in with the malty flavors of the beer.

It's not just the same hometown that unites Stone Brewing and Modern Times. It's an unceasing drive to create, innovate and challenge convention. Modern Times / Stone WIzards & Gargoyles IPA is an achievement of collaborative awesomeness between two San Diego craft beer trailblazers. Centennial, Cashmere, Citra, and Azacca hops are joined by two in-development hops, yielding juicy notes of tropical citrus that play beautifully with the robust flavors and aromas of the coffee, supplied by, of course, Modern Times' caffeination masters. The result is a beer as wonderfully unique as its creators.

Well, I will not have it. We are striking back for true craft by stealing the pilsner back from their evil clutches, and restoring it to its almighty glory. They do it cheaply. We do it right. Time spent in bourbon barrels gave an already complex beer even more complexity and flavor intensity, layering additional caramel-like and vanilla flavors on top of those already present. Aromas of rich coffee and dark chocolate are followed by nutmeg and cinnamon; a lush, heavy mouthfeel laden with charred oak and toffee engulfs the palate on the first sip.

Aroma: Classic pine and citrus hop aroma combined with the piney gin barrel botanical aromas. Some biscuity malt notes complement the hoppy aroma. Taste: As with the aroma, some really classic piney hop flavors abound here, complemented by the pine notes of the gin barrel. Woody flavors and some soft vanilla from the barrel aging are married in seamlessly with the delicate malt flavor. Some rye spice aftertaste on the finish.

Hearken, ye merry craft-ale imbibers, as we present thee an ale inspired by medieval England. This re-creation of a medieval English ale is a brew the Knights of the Round Table would have heartily enjoyed. A strong beer, it has intense bready malt character accompanied by herbal, earthy hop notes and mild smokiness. The addition of elderberries imparts subtle blueberry-like flavor, while flaked oats and pale, amber and smoked malts mirror grains used by English brewers hundreds of years ago. It’s a beer inspired by the Middle Ages, but perfect for enjoying in the 21st century.
