	The Bruery - 7 Swans-A-Swimming Style: Belgian Quad ABV: 11.00% Brewed with nothing but water, malt, yeast, hops and a bit of Belgian dark candi sugar, this beer may not be as out-of-the-box as some of our past winter brews, but it’s just as tasty. Rich and complex, this robust dark ale juggles notes of raisin bread, dried apricots, burnt caramel and roasted pecans.

Born from arguably the most miserable day in the history of The Bruery, Black Tuesday quickly became legend and lore in the craft beer community. A 16 hour brew-day, overflowing mash, burns from scalding water and frustration resulted in the base for this now legendary Imperial Stout. Founder Patrick Rue was so angry with the beer that he condemned it to Bourbon Barrels for a year. The Result? The most decadent of ales, developing deep, warming notes of vanilla, caramel, dark chocolate, bourbon, dark fruit and singed oak.

The Bruery - Bouffon

We designed a recipe with bitter orange peel and coriander and set it to ferment and age with our mixed house culture and Bavarian wit yeast in the designated foeder for four months. Using the Jester King house culture for bottle conditioning, Bouffon features some of the classic notes you’d look for in a wit, including banana, pear, vanilla, bubblegum, white pepper, lemon and a signature yeast profile.

4 Calling Birds was our 2011 winter ale - a spiced strong dark ale. We took inspiration from the traditional winter warmer for our fourth verse, integrating gingerbread spices into a robust dark ale. Notes of licorice & banana bread mingle with dark fruit, molasses and bitter chocolate for a perfect cold weather sipper! This is the Bourbon Barrel Aged version of last years holiday seasonal! Spending a year in rich oak barrels, the beer has picked up incredibly deep and luxurious notes from the oak and bourbon, but has maintained it's original charm. 14.8% abv, suitable for aging at least until 12 Drummers Drumming is released.

The Bruery - Chocolate Rain
Style: American Imperial Stout

Originally created as a single cask conditioned version of our Black Tuesday imperial stout for one of our release parties several years ago, Chocolate Rain has now taken on a life of her own. The base beer is a select few bourbon barrels of our imperial stout that can range anywhere from 16-21% in alcohol. Once those barrels are chosen, we spend an entire day slicing fresh vanilla beans to add to those barrels along with cacao nibs that are sourced by San Francisco based TCHO chocolatier. After a few months soaking up those rich, dessert-like flavors, the barrels are blended to taste and the result is one of the most decadent beers that we make. Rich in chocolate, vanilla, oak and bourbon, it truly puts the 'imperial' in imperial stout.

The traditional seventh anniversary gift is copper, so we’ve named our 7th anniversary ale “”Cuivre”” which is “copper”” in French. Cuivre is our seventh anniversary ale, loosely brewed in the English-style old ale tradition using our house Belgian yeast strain and then blended using the solera method. A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age. Layered with complex flavors of dark fruit,vanilla, oak, and burnt sugar, Cuivre is a robust ale, surely the perfect beer to mark this major milestone.

L'deracola is a beer inspired by another favorite drink of ours that probably shouldn't be such a favorite... Cola! To create this unique beer we had to dive through the overwhelming flavors that create the worlds most popular soft drink. Around a dozen different spices were added to a dark malt base and it was finished off with a twist of lime for good measure. The resulting beer has all of the flavors of an ice cold cola, without the overwhelming sweetness. Delightfully refreshing on its own, but also ideal for a modern take on a classic style cocktail.

A hoppy red ale at heart, we, like many other SoCal brewers, chose the citrus and floral notes of the Centennial hop to balance the light caramel sweetness of the malt.A portion of an older batch is oak-aged and blended with the fresh dry-hopped batch. The resulting blend has notes of toffee, orange peel, crushed herbs, vanilla & freshly sawn oak, for a beer that is intricate, yet unassuming.

	The Bruery - Melange 14 Style: Old Ale ABV: 13.40% IBU: 25.0 French for “blend”, this mélange fuses the mature character of some of our most vintage barrels of barleywine and old ale with the dark depth of our imperial stouts, including both Tuesday-themed releases and Share This. This mélange is one for all, with rich, complex notes and the signature kiss of oak.

Mélange #3 is a blend of three bourbon barrel aged strong ales. White Oak Sap, a wheat wine, our Anniversary Series old ale and our imperial Stout, Black Tuesday, join forces in this luxurious strong ale that links some of the best characteristics of each of the contributing beers. Chocolate, dark fruits, oaky vanilla and rich toffee-like character reach through the bourbon veneer for an intensely satisfying quaff.

We teamed up with our friends at Collective Brewing Project to create Minor Miner Grisette, a grisette-style ale aged in oak foeders with orange blossom and calendula flowers, inspired by traditional grisette beers enjoyed by industrial miners after a long day of labor. Though the environment of beer consumption has changed, this easy-to-drink beer still hits the spot when looking for a refreshing beer at the end of the day

The Bruery - Mischief
Style: Belgian Golden Strong

Mischief is a hoppy Belgian-style golden strong ale. This wickedly good golden ale is fiendishly dry-hopped with American hops to add a layer of complexity and mystery to its fruity, dry Belgian-style character. Citrus and resin diabolically combine with ripe melon, pear and slight peppery spice in a precariously effervescent mixture. Enjoy it, but you’ll want to keep an eye out.

Horchata is a traditional, sweet, milky drink originating in Spain and Latin America that has become quite popular in Southern California, particularly with Mexican cuisine. Our take on the traditionally non-alcoholic drink is a blonde ale brewed with a heavy dosing of rice, cinnamon and fresh vanilla beans along with lactose for a litle extra creamy character. If you didn’t know better, you’d think it was carbonated horchata.

People have tried to define romance through the years, and this beautiful sour blonde ale is our attempt to capture the complexities of love. The Bruery - Rueuze
Style: Lambic
ABV: 5.90% IBU: 3.0

Rueuze is our take on the traditional Belgian-style blend of lambics of different ages. We carefully select a number of oak barrels from our warehouse that have been aging our sour blonde ale for anywhere from several months to several years and blend the beers together to what we find to be the ideal flavor. This is one complex beer. Notes of hay, barnyard funk, apricots and olives play wonderfully with the balanced acidity.

Cacao nibs work in unison with our already chocolatey imperial stout to form a savory base perfect to layer flavors upon. A blend of ancho chilies and chipotle peppers provide smoke and a subtle heat character that doesn’t overpower the many nuances that mole sauce is known for. The recipe comes to a decadent conclusion with an ample dosing of fresh vanilla and cinnamon.

Brewed with beachwood and cherrywood smoked malt, and aged in rye whiskey barrels, Smoking Wood is a delicious demonstration of what wood has to offer when it comes to beer. This imperial smoked porter is brewed with a hefty amount of rye malt, contributing to a full body and light spiciness. Toasty oak, caramel and vanilla flavors balance the smokiness, contributing to an intense yet refined flavor profile.

	The Bruery - Smoking Wood with Coffee and Vanilla Style: Smoked Beer ABV: 13.50% Upfront there is a moderate flavor of roasted malts and caramel malts with a light amount of sweetness. That is followed by flavors of sweet vanilla, coffee, toasted oak, and bourbon. Finally there is a light to moderate amount of smokiness in the finish along with roasty bitterness which lingers through the finish.

	The Bruery - Tart Of Darkness Style: Sour ABV: 5.60% We brewed a stout but we then decided to throw it into oak barrels...and added our special blend of souring bacterias and yeasts. The result is a perfectly tart yet awesomely dark and roasty sour stout. Not a style you see too often - and in our opinion, not a style you see often enough.

The Bruery - Terreux Quadrupel Tonnellerie
Style: Belgian Quadruple
ABV: 10.20% IBU: 13.0

Our Tonnellerie series is the perfect showcase of our “wildly traditional bière”. French for “cooperage”, each beer in the series shares one core trait: they were all fermented in oak. Beyond that, the recipes and styles are as unique as the cues they take from nature. Quadrupel Tonnellerie, a sour and funky barrel-fermented Belgian-style quadrupel with blackberries, is no exception. A style known for being at the more malty, complex and rich end of the Belgian strong ale spectrum, this quad revels in layers of dark fruit and figgy flavors, and complimentary undercurrents of oak. The natural esters from the Belgian yeast compliment the rustic, earthy and wild qualities derived from the barrels and nature – plus the piquant flavors from the fruit – for a dynamic flavor profile and mouthfeel that will evolve over time.

Similar to an imperial porter but distinctly different, the baltic porter style is heralded for being full-bodied, roasty and smooth, with overtones of toffee, coffee, caramel, chocolate and dark fruit. We take it one step further and hammer it home with the bold, sweet flavors of maple syrup and a touch of fenugreek, placing it in a different, experimental class entirely.

Style: Belgian Strong Dark

Monastic breweries wrote the book on complex ales that weave notes of dark fruits, spices, caramelized character and warmth into each sip. The Order summons that tradition and adds local inspiration. Our darkening, Belgian-inspired abbey ale features dark-fruited character from dates, Belgian-style sugars and subtle spicing from coriander, which compliments the Belgian yeast esters.

The Bruery - Trade Winds
Style: Belgian Tripel
ABV: 8.60% IBU: 20.0

Our Summer seasonal, Trade Winds Tripel is a Belgian-style Golden Ale with a Southeast Asian twist. Instead of using candi sugar (typical for such a beer), we use rice in the mash to lighten the body and increase the gravity, and spice with Thai Basil. The result is an aromatic, digestible and complex beer made for a lazy summer evening.

The Bruery - White Chocolate
Style: Wheat Wine
ABV: 13.80%

The primary component of our "White Oak" ale is a 100% barrel aged wheat wine that we affectionately refer to as "White Oak Sap." Essentially a "summer" barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we've added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate...hence the name.

	The Bruery - White Oak Style: Wheat ABV: 11.50% IBU: 20.0 White Oak is a blended beer-- 50% wheatwine aged in Bourbon barrels (we call it "White Oak Sap"), and 50% Mischief (our Golden Strong Ale). Vivid caramel, coconut and vanilla flavors blanketed in a crisp yet robust wheat ale, White Oak is an exercise of balance.
