When the Czars first tried export stouts from the UK and Ireland they could only think one thing, bigger, stronger, darker! Brewers were contracted to make the Russian royals beers that could warm your toes in the middle of a Moscow winter. The big stouts, have evolved slightly in the US to be a little more bitter and hop forward than their traditional old world counterparts. Our version has a deep caramel head, with malt notes of toasted raisins, molasses, chocolate, and roast coffee. There are subtle hop notes of pine and citrus although it is hard to detect sometimes through all that malt! Intended to be a dessert or winter warmer over a session beer, enjoy with something (or someone) sweet.

Style: Mexican Lager

Crispy, light, refreshing. Mexican style lagers are quaffable beverages. You can have a few at lunch or on the beach and still paddle out for an afternoon surf, you can drink a six pack on the golf course and not fall over the last hole. Our take on this classic is made from both Domestic 2 row barley and flaked Maize. It's not at all hoppy or bitter, just smooth and drinkable.

Style: India Pale Ale
ABV: 6.10%

lots of raw oats and wheat to make it hazy...we used Simcoe hop oil to get the bitterness we wanted, which since no vegetable matter went into the boil, we were able to run it through the heat exchanger and back into the kettle to get down to 180 degrees which is below the temp where you get bitterness but only flavor, yet it is above the temp where bacteria could infect the beer. This allowed us to throw the biggest hop charge we've ever done in the whirlpool at 3 lbs./bbl, and we steeped them in there an extra half hour....half that addition was lupulin powder. we also dry hopped 3 lbs./bbl which is the most we've ever done. What was cool is neither us or Alpine had used lupulin powder nor run through the plates to cool the beer down for extended hop steeping.

The base recipe is a smooth strong porter, slightly less roasty than a stout but with plenty of chocolate overtones. Hop flavor is minimal while organic coconut flakes are oven roasted and steeped in the finished beer.

Our American Pale Ale is steeped onto two types of homegrown organic chiles; Jalapeño for flavor and Cobra for intense heat. We balance the burn so that you can still enjoy the chile flavor and hoppy goodness of the Pale Ale. We find the chiles and Cascade finishing hops to be a great combo and love to drink this beer on a hot day or with spicy food. Enjoy!

As Part of our rotating line of IPAs, Far Far Away IPA showcases Galaxy hops grown exclusively in Australia, as well as Mosaic hops from the US northwest. Used liberally late in the boil and dry hop, Galaxy along with Mosaic (a daughter of the Simcoe strain), pair well to create a beautiful flavor and aroma combo. Citrus, passion fruit, and hints of Strawberry come from the Galaxy, while additional Citrus, pine, tropical fruit, berries, and ‘dank’ overtones come from the Mosaic strain. A small amount of caramel malt with a US pale malt backbone balances the beer out from start to finish.

This is a big West Coast Imperial IPA for hop lovers. Huge tropical notes dominate the nose and flavors of citrus, pine, and passion fruit mingle on the tongue with a touch of caramel malt. The relatively dry finish makes the beer crisp on the tongue and the high bitterness rather refreshing. A little sugar is added to this to drive up the starting gravity and allow for the dry finish in such a big beer.

Thorn Brewing Co. - Saison Du Parque Sud
Style: Saison
ABV: 6.80% IBU: 26.0

Meaning Season, in French, the Saison is a summer farmhouse ale originating from the Quinast region of Belgium southwest of Brussels. Saisons were traditionally lower alcohol beers (though not anymore), and were meant to be consumed by farmworkers working in the fields. Saison yeast can work well at high temperatures in summer barns and can sometimes produce a hint of wild flavor. Light bodied, crisp, and dry, the Saison is perfect for hot weather. Our version uses wheat malt in addition to Belgian Pilsner malt for that summer taste, while Saaz hops add a distinct spiciness to the dry finish. Notes of Pear, Corriander, and Pepper blend with hints of Vanilla to create that certain intangible Saison taste of harvest time in the fields of Belgium.

It offers IPA-like citrus fruit flavors from the Amarillo and Galaxy hops up-front, but is lower in alcohol and lighter in body so you can drink a few without getting full or tired.

Thorn Brewing Co. - The Menace
Style: Imperial IPA
ABV: 11.00% IBU: 104.0

This is a big West Coast Imperial IPA for hop lovers. Huge tropical notes dominate the nose and flavors of citrus, pine, and passion fruit mingle on the tongue with a touch of caramel malt. The relatively dry finish makes the beer crisp on the tongue and the high bitterness rather refreshing. A little sugar is added to this to drive up the starting gravity and allow for the dry finish in such a big beer. Citra and Simcoe are used heavily, late in the boil. Then the beer is dry hopped twice with 4 different hops at about double the hops rate of our IPA. Enjoy!

Wedding Bliss Pale Ale (6% ABV) is the celebration of two amazing people, Joe Lisica of Brothers Cascadia and his fiancé, Katie Ostler, bringing you the lovely marriage of hops and malts in this bright pale ale. They selected some of their favorite aromatic hops to bring notes of passionfruit, guava, grapefruit, and lycée. Then, a generous amount of Maris Otter malts were used as the foundation of this union. Your wedding day is one of the most magical times to share with friends and family. Brewed in collaboration with the McIlhenney Clan (Pat, Shawn, & Val). This IPA is a fruit basket of flavor, just name a fruit and you'll be able to taste it. These flavors come from the use of 10 different hops at a rate of 7.25lb/bbl, and being double dry hopped. Backed up a biscuitty and nutty malt backbone from the use of Golden Promise & carapils malts, with a hint of white peach from the use of caravienne.
