A completely new delivery for IPA, not to be confused with 'West Coast.' We've re-kindled our affection for this lovely ale inspired by fresh new ideas unique to brewers from the state of Oregon. This IPA recipe is hopped the entire way through with very progressive and extremely fruity American hops, then brought to a balance with a humble malt that reveals a delicately plucky caramel.

Trinity Brewing Co. - Brett Anomala

Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. Brett anomola was first isolated in Adelaide, Australia and is well known for it's intensity, specifically when aged. Weâ€™ll be candid here as it was our first chance to brew with this specific Brett, so we don't know exactly what to expect. #7 will be a surprise for us all!

	Trinity Brewing Co. - Certifiably Malchus Style: Biere de Garde ABV: 9.20% IBU: 35.0 Brewed with only golden malts. Double mashed and Kettle boiled for over 24 hours to achieve a rich copper color and concentrate malts. Cool fermented with proprietary yeast and aged on choice Bourbon barrels.

	Trinity Brewing Co. - Chilly Water Style: Baltic Porter ABV: 8.50% Not a common style of beer by any means, in fact this style of Porter is a Bottom fermented lager rather than an ale. Keep in mind this beer is brewed by Trinity and any beer we do seems to have an added twist. The twist in this seasonal is a choice to age the beer on some rare Mexican wood known as Cauchalalate.

We brew this beer with rich milk chocolate then age it on whole Madagascar Vanilla Beans and Dagoba Cacao Nibs

Trinity Brewing Co. - Damn It Feels Good To Be A Gangsta
Style: Sour
ABV: 8.10%

Damn, It Feels Good to be a Gangsta’ is a jet black barrel aged Bretta beer, featuring 3 golden ingredients: honey, mustard seed, and golden raisins. Reminiscently vinuous, this beer comes off as a hybrid with ironic wine/grape notes accompanied by profound dark barley malts. Barrel aging this beer and a 100% Brettanomyces fermentation result in a decidedly complex and interesting structure.

Inspired by the ancient and more authentic Saisons of southern Belgium. We gather the ingredients for this recipe from our own small Eco-region, and strictly only use ingredients from local farms and gardens. Each year we use a number of unique pumpkins and squashes along with a number of unpredictable ingredients that arrive with harvest to create the creamy and very drinkable indigenous interpretation of this Belgian style.

Trinity Brewing Co. - Red Swingline
Style: American Wild Ale
ABV: 4.10%

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest.

	Trinity Brewing Co. - TPS Report Style: American Wild Ale ABV: 4.80% Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests. Fermented 100% with a very rare variety of Brettanomyces this beer is exceedingly aromatic. Aged on French Oak Chardonnay Barrels and roses petals for complex maturity and sweet earthy notes.

	Trinity Brewing Co. - Wild Apple Saison Style: Saison Farmhouse Ale ABV: 8.10% A 'Co-Loveration' by two brewers inspired by their mutual sincerity for: Saison, wild yeasts, and locally grown raw materials. This crude but delicate creation was crafted with apples grown in Palisade Colorado, wild Brettanomyces, and locally grown organic flat leaf parsley. No hops were used in this Saison.
