We took a different road to arrive in this same place. Combining pale British, American, and German malts with copious amounts of Citra and Apollo hops, we've once again summoned a familiar. Through the golden haze filled with dank notes of fruit and green, you suddenly recall that our beers always arrive precisely when they mean to... which sometimes means not at all.

Triptych Brewing - AJ's Stout Vol. 2
Style: Double Stout
ABV: 15.50%

This time, we sampled over our entire barrel inventory to find an eclectic mix of barrels that we thought represented some of the best of our stock. The oldest barrel was almost 3 years old, the youngest was just over a year old, but over half were right in the middle at 2 years. The blend includes barrels from a number of our favorite distillers and the final beer was lab tested at 15.5% alcohol by volume by the heros at Omega Yeast. Expect big notes of char, bourbon rickhouse, seductively deep cocoa and hints of vanillin. Finishing with a pleasant balance of sweet bourbon and dry oak tannin.

Style: New England Double IPA
ABV: 8.80%

BATCH 1100, a double IPA featuring a sextuplet of old school and new school hops. The aroma of this beer leaps out of the glass with notes of passionfruit, pineapple, peach and lime followed by those danky hints of boxwood that we've all come to know (and love). A tiny piquant of resiny, grapefruit bitterness pokes through this otherwise creamy masterpiece.

	Triptych Brewing - Batch 301: Sour Cherry Quad Style: Sour ABV: 9.50% Batch 300 Belgiam Quad base, aged in our sour beer program. We used a blend of sweet and tart cherries (more than 600 lbs worth) to add subtle cherry pie notes to this already expressive Belgian Ale.

Triptych Brewing - Batch 600
Style: Triple IPA
ABV: 8.90%

For our 600th batch, we decided to go big. We built a hazy, triple IPA that we then dry hopped with Citra. Then we dry hopped it with more Citra. And finally, for good measure, we dry hopped it a third time with..more Citra. Layers and layers and layers of silky oats and our favorite British malt combine to form this smooth beer that overflows with sherbet, mango, peach and citrus.

Triptych Brewing - Batch 700
Style: Belgian Quadruple
ABV: 10.80%

This Belgian inspired strong ale pours a sexy, slightly hazy chestnut color. The nose is full of vanilla, spice, and dried dark fruit. Bubblegum starts to pop out as it warms. The flavor is smooth, full of dark fruit, syrup, and a hint of cocoa before finishing in spicy warmth. Kept cold, this beer should continue to develop for many months to come.

We hosted our friends from Lil Beaver brewery in Bloomington, Illinois and we decided to brew this decidedly breakfast themed strong ale. Built on a blend of our favorite British base malts, we added a touch of lactose for residual sweetness and 10 gallons of Vermont maple syrup, because who doesn’t like syrup with their breakfast!? Finally, we conditioned the beer on a big ol’ pile of Coffee Hound coffee beans.

Brewed as a love letter to the trendsetters out on the east coast, Dank Meme is golden colored pale ale, 45 IBUs and 5 percent alcohol by volume. This beer is me not caring about clarity or aesthetics, in fact not a single fining was given to this beer. We hopped this beer like a boss, Azacca, El Dorado and plenty of Citra in the finish are sure to make you say, 'O rly Me Gusta'

A dark lager that used a blend of imported and domestic malts (only because import supply of specialty malts is still sketchy at times) plus Czech Saaz hops. Originally, when brewed back in October was contemplating calling it a "Czech Dark Lager" but I've since come to my senses. It uses our house lager yeast that has a decidedly German lineage; we very thoroughly step mashed it but did not decoct it; and it's highly attenuated.

We took the base beer behind Really Dank Meme, pulled back the hops a bit, added 100 pounds of lactose (milk sugar), conditioned it on concentrated coconut and pineapple juice, and finally dry hopped with a touch of Zythos hops. The result is a creamy, pineapple and coconut laced treat with a hint of balancing hop bitterness in the finish.

Brewed for crisp fall days and the brisk nights that accompany them, this red ale pairs German RedX malt with tenacious American hops. Heavily dry hopped with Mosaic and Simcoe, this beer is full of pine, citrus and stone fruit, balanced by notes of toffee, biscuit, and toast from the malt. Pair this beer with tailgates, touchdowns and barbecue.

Style: Brown Ale
ABV: 6.50%

Forged with a base of imported British malted barley including Maris Otter, an assortment of medium crystal malts, brown malt, pale chocolate and a huge pile of oats, this brown ale was conditioned on a combination of whole and ground coffee after fermentation was complete. For this inaugural edition, we used a single-origin, Geisha coffee that was grown in Honduras by the Caballero Family and roasted by our favorite Chicago coffee roaster. Overflowing with dark fruit, sweet cherries, lightly burnt bread crust, this brown ale finishes slightly dry and nutty with a pleasant coffee overtone. 6.5% alcohol by volume.

Brewed in honor of a friend and a mentor who helped Triptych in so many ways back in its formative years. Named after our friend's children, it is a pale lager featuring Czech Saaz hops. Weighing in at 5.4% alcohol by volume with a very crispy attenuation of over 82%, this beer also has the honor of being the first decoction mashed beer to be released at Triptych. This traditional, but intense mash process amplifies the pilsner malt backbone of this wonderful lager. The Saaz hops provide mild herbal notes with a pleasant, restrained bitterness through the finish.

Along with a traditionally inspired grain bill utilizing a blend of roasted malts, we used a significant proportion of smoked malt from Germany. The result is a dark, complex ale overflowing with notes of toast, roast, dark fruit and (of course!) smoke.

This light ale gives homage to the brewers who came before us and is brewed using a base of the best North American barley and a significant amount of oats which helps not only to contribute a smooth, creamy mouthfeel but adds a touch of residual sweetness in the finish. A generous addition of Cluster hops provides bitterness through the finish.

	Triptych Brewing - Tarnt: Razzle Dazzle Style: Sour ABV: 5.80% We kettle soured this beer with our favorite lactobacillus strain, fermented as normal, and then added raspberry puree and a touch of lemon for a raspberry lemonade inspired crusher. Raspberry jam becomes more apparent as it warms, but initially lemon is in the fruit seat leading to a tart finish.

Triptych Brewing - The Pygmalion Pilsner
Style: Pilsner
ABV: 5.50%

Pygmalion Pilsner is our take on the nascent style of Italian Pilsner. We used a duo of traditional lager malts plus a blend of German and American hops in the brewhouse. Then we fermented this beer low and slow with our favorite lager yeast. After fermentation was completed and a long cold maturation period, we gently dry hopped this beer with German Saphir, Huell Melon and American Liberty hops. The result is an incredibly crispy beer that jumps out of the can with subtle spicy and herbal impressions.

Memeshake is a place for us to experiment with the nascent style of Milkshake IPA. But one of us is lactose intolerant so we’ve employed some other tricks to give this beer more body PLUS SOME residual sweetness. On top of that base, we will layer fruit (sometimes), different tropical hop combinations and vanilla beans. This initial batch features Amarillo & Motueka hops plus vanilla beans.
