Style: New England IPA
ABV: 6.50%

NE IPA hopped with Citra Spectrum (Hop Oil), Centennial, Cryo Pop and Sabro hops. This beer is built on a malt bill of mostly Carolina Gold (grown in NC) malt, white wheat and flaked oats. This beer is a light bodied and pleasantly easy drinking IPA with big flavors and aromas of bright citrus, lime zest, and coconut with a soft and creamy finish. 6th Man NE IPA is a near perfect patio sipper that’ll put you on Island time and could easily make the starting 5 on any team. ABV: 6.20%

We wanted to build something that conceptually reflected the challenge and structure of a fugue. We used 5 hop varieties (Amarillo, Citra, Centennial, Galaxy, and Callista) to create two voices. Using the amount added and the time added we built a subject and a counter subject, a progression, and a final repeating of the subject across the brew day and the 7 days of dry-hopping additions that followed.

“Be Excellent to Each Other” is time travel in a glass, back to the heydays of Craft Beer’s boom in NC, when West Coast IPA was king. Be Excellent to Each Other is built on a base of Marris Otter and Munich malts with Flaked Barley and Oats for added viscosity and hopped with old school hops including Chinook, Centennial Incognito, and Columbus Cryo as well as new school additions of Citra and Azacca Cryo Pellets. This beer is bursting with West Coast Hop character with piney, sticky resin, citrus and slightly roasty flavors and aroma and earthy undertones.

We love New England IPA's of course, but we wanted to brew a beer that had all the characteristics that we love about them, hazy - juicy - aromatic - but with a pleasant bitterness component. Lance said we made a West Coast - New England style IPA and I think he's right . Brewed with Pilsner, Spelt and Wheat. Hopped with Columbus, Citra and Centennial in our boil and then dry hopped with all three plus Chinook.

D.A.V.E. is our single hop series American Pale that can be best described as the little brother of a NE style IPA with a heavy application of the featured hop in the dry-hopping and minimal in the boil and a supporting amount of haze contributing protein. Cascade is the most popular hop variety in craft brewing and is known for having a unique floral, spicy and citrus character with balanced bittering potential.

This beer is fermented with our Lager yeast and starts fermentation at colder than normal temperatures (some might say Extra Cold). The malt bill of North Carolina Pilsen, Carapils and Unmalted Rice creates a beer with the hop characteristics of a Pale Ale while still clean, crisp and crushable. This beer is hopped with Centennial and Belma CGX in the whirlpool (to retain intense aromatics) with Strata and El Dorado Hop Terpene additions. “Reinventing the Wheel” has the aroma and flavor of stone fruit, ripe melon and citrus zest. Approachable and easy drinking with balanced hoppiness!

The patron Saint of Champions, this version of St. Drasusinus is similar to our last iterations with a few tweaks and of course the inclusion of Cocoa Nibs. Brewed with Pilsner, Epiphany Munich malt, Caramel and Chocolate Malts. Hopped modestly with Czech Saaz. Fermented with a great Belgian Yeast strain from Westmalle. As you may remember, this beer was originally brewed for Cloud Surfer Day at Maywood Ave in 2019. It takes its inspiration from the original Surfer in hop selection (Mosaic and Citra) and malt bill but taken over the top with some a huge hop rate. The malt bill has Maris Otter as a base backed up with Riverbend Maltery (AVL) Streaker Oats and Epiphany Malt (Durham) wheat to round out the flavor, provide body and help retain those oh so coveted hop oils. This batch is 10% ABV and is sure to make an....impact.

For this beer I took the base recipe of Perfect Attendance and modified a few things to the recipe, the water and of course the abv to take this from a porter to a stout. Brewed with Maris Otter, Roasted Barley, Chocolate Malt and Crystal Malts. Hopped in the kettle with Columbus and dry hopped with Simcoe. Tasting Notes; Hoppy Chocolate out front, thick mouthfeel, light roast finish
