	Urban Chestnut Brewing Co. - BAP Style: Kolsch ABV: 4.90% IBU: 27.0 BAP has a double meaning. It’s UCBC’s interpretation of the classic bier style from the city of Köln…Kölsch…and it’s the name of the most famous rock band that calls Köln its home. The bier (not the band) is a warm-fermented golden ale, that is then cold-conditioned, taking on many characteristics of a lager.

UCBC’s Barrel-aged Series - our on-going expedition mostly dedicated to those ever questing ’rye, whiskey, bourbon, etc. barrel-aged beer zealots’. This particular ’aged-one’ is a barley-wine ale that rested for a few months in a rye whiskey barrel, imparting it with some not so subtle notes of spicy rye, oak and sweet caramel.

Our brewmaster Florian admittedly hasn’t dabbled in ciders too often. So when he described UCBC’s very first cider, Bushelhead, as estery and a little ‘winey’ we weren’t sure if he wasn’t being a bit ‘whiney’ himself. So we’ve declared that besides being a cider, “Bushelhead” is a homonym meaning; ‘winey, ‘strong cider’, or ‘whiney’.

Peter the Great loved English StoutsUnfortunately, the beer could not survive the long journey until 1796 when London brewery, Thrale’s, increased the alcohol content and hopping rate in their stout creating the Imperial Stout. As a nod to Peter and Thrale’s, we’ve “imperialized” this Stout by fermenting it a bit further with sour cherries.

With a base of pilsner malt and local raw wheat we added over 1000 lbs of peaches from Herman’s Orchard Farm in St. Charles and aged hops during a secondary fermentation.

Some refer to the Dunkel style as the original bier of Munich and its surrounding villages (Dörfer). This everyday bier ranges in color and sweetness depending on the amount of Munich and roasted malts used. The sweetness of the malt is then balanced by the use of another Bavarian friend…the Hallertau hop…in this specific case, Hersbrucker, grown near Wolnzach, Hallertau.

We originally brewed this Maibock for the St. Louis Brewers Guild and Missouri Coalition for the Environment Sustainability Summit in 2016. Gewässerschutz (German for “water protection”) not only honors the importance of sustainable brewing but also is the perfect accompaniment for Earth Day celebrations with its prominent yet smooth, toasty maltiness.

The Helles is the everyday beer of Bavaria, but we have collaborated with our friends at Stubborn German Brewing Company in Waterloo, Illinois to revolutionize this classic style. To do this, we dry-hopped the beer with a massive amount of newly developed German hop varieties to not only provide a prominent citrus and tropical fruit aromas but also provides a bit of haziness in this pale (Hell) lager. Style: Traditional Ale
ABV: 4.50% IBU: 20.0

In addition to using sake yeast, Konomi was also brewed with small quantities of matcha, giving the beer a slight essence of the intense green tea used in tea ceremony, but without overwhelming or competing with the fruity characteristics of the yeast. Rice was also used in a portion of the grain bill. The result is a light and refreshing ale perfect for the warm days of the Japanese Festival.

While our friends from Mondo Brewing Company visited us from London, we decided to brew a collaboration beer to celebrate the arrival of spring. We hashed out a recipe by taking the traditional Maibock style, an amber colored, rich, malty beer commonly consumed during spring celebrations, and revolutionizing with the addition of maple syrup after it was fermented. The result is this complex brew which celebrates not only a Trans-Atlantic friendship, but also the end of a long winter

Pierre Celis almost single-handedly, resurrected the Belgian Wit – a deliciously refreshing wheat beer originally created by Belgian farmers in the middle centuries. Today, the style has a generous range-of-flavor and is often infused with a variety of spices, primarily coriander and dried citrus fruits. In keeping true to Mr. Celis’ homeland of Belgium we additionally brew ours with unmalted wheat.

This lightly hopped, copper-colored ale is a style that originated in the northern ’tal’ or valley of Germany commonly known as the Rhine Valley. The specific style is Altbier; ’alt’ meaning ’old’, referencing the time-honored practice of top-fermentation, which actually results in a fresh (not old) session ale with a slightly malty skew.

We affectionately refer to the first beer in our Revolution series of modern, American craft beer, as our unusual little bird. It’s a little on the flighty side @ 5.4% ABV, and it’s a little on the wacky side because we brew it with finely milled chestnuts (genus castanea …for you nut freaks), Willamette hops, and we ferment it with a Bavarian Weissbier yeast strain. All of these nuances contribute to its ‘nutty’ personality

Urban Chestnut Brewing Co. - Wolpertinger
Style: Weizenbock
ABV: 11.50% IBU: 20.0

We ‘captured’ Wolpertinger 2015, and ‘held’ him for several months in a stainless steel ‘cage’, before determining that this year’s Bavarian Beast is a triple fermented ale that is spicy & Belgian-like. Beyond this we have also noticed that he has a pronounced bourbon essence… presumably from a hibernation period in oak barrels of the same, and we believe he may also have a bit of Burgundy (oak too).

Urban Chestnut Brewing Co. - Xaver
Style: Wheat Ale
ABV: 5.80% IBU: 14.0

Thomas Eichenseher, Braumeister at Germany’s Karmeliten Brauerei, collaborated with UCBC to brew this Old Bavarian-style Wheat beer. Xaver, featuring a prominent banana aroma combined with a nutty, caramel malt flavor, is the first of many future collaborations with European breweries— helping us pay Reverence to our old-world roots.
