This huge brew filled our mash tun to its absolute capacity with Crisp Malting Marris Otter malt. After a lengthy fermentation, we carefully aged this strong and flavorful beer for 3 months to allow time for the big bold flavors and aromas to mellow together. This strong, sipping beer is an indulgent once a year offering, released to celebrate our anniversary.

Waikiki Brewing Co. - Best Bittah
Style: English Bitter
ABV: 5.00% IBU: 30.0

Best Bitter used the same 100% English malt grain bill from our barleywine brew to create a second beer with a lower gravity. Easy drinking and gently carbonated, this is a great session beer or pau hana beer. We use English East Kent Goldings hops with their pleasant earthiness as the bittering hops, and American grown Cascade for just a hint of aromatics at the end of the boil.

We love the amazing and expressive qualities of saison yeast. The yeast brought fruitiness, and then inspired us with some subtle clove and nutmeg phenols. But what would we bring to the party that the yeast started? Honey and midnight wheat malt. 100% raw Big Island Lehua honey contributes aromatics to the nose and dryness to the finish and dark malt brings complexity and depth to this truly unique black saison.

Two Row, crystal and Munich malts create the base for the big flavors of chocolate and black malt to build upon. The chocolate and coffee flavor and aroma of the malts are highlighted nicely by the addition of black strap molasses in the boil. Goldings and Fuggle hops provide refined earthy bitterness that compliments the roasty flavors of the malt nicely.

Huge quantities of two row malt, combined with crystal and Munich malts, set the stage for this strong, highly bitter, hugely aromatic Double IPA. We quite literally add hops by the bucket load during the brew, then double-dry hop to pack as much dank piney resinous aroma as possible into every glass. Style: American IPA
ABV: 7.18% IBU: 75.0

Two row and crystal malts make for a nice malty backbone to support the big IBU and aroma of our IPA. We use a combination of centennial, cascade, and simcoe hops in three separate boil additions to give bitterness, then dry hop with the same three hops to drive the intensity of the floral, piney, citrus, and currant aromas as high as possible.

Waikiki Brewing Co. - Hana Hou Hefe

Equal parts malted barley and malted wheat make up the base for this beer. Noble hop, tettnang, provides the bitterness and small additions of perle and centetnnial in the whirlpool balance out the aroma. An addition of sweet orange peel and strawberry puree prior to fermentation make this cloudy American style hefeweizen the ultimate in refreshment.

	Waikiki Brewing Co. - Hapa Menehune Style: Brown Ale ABV: 4.68% IBU: 20.0 This version of our brown is, well rather golden, with beautiful orange hues. The flavors and aromas range in such is a lightly toasted biscuit with cocoa around the edges, yet when it warms a bit, the chocolate becomes more pronounced, and kind of adds to the mouthfeel; like it melted into a warm cookie.

Sure one can expect a Marzen brewed in August would ready by Oktoberfest, right? Well Not when that Marzen decides clock in on “island time.” This beautifully crisp German style lager, had us waiting well past the iconic fest. With a nice roasted malt nose and a subtle sweetness, this Marzen sure makes the wait more than worth it.

We brewed up this nitrogenated treat just in time for St. Paddy’s day. No, it’s not named for your favorite snake chasing saint, it’s named for our brewer, Paddy!! A big roasty nose gives way to a smooth and mouth coating chocolately flavor with hints of dark roast coffee. Watch the fine nitrogen bubbles as they cascade through your beer leaving behind a frothy tan head, then take a big gulp and show off your stout moustache. Sláinte!

This beer harkens back to then story of Peke, the Fire Goddess, whose volcanoes and lava created the Hawaiian islands. To brew this imperial red ale we smoked Victory and Munich malts over Kiawe wood and added Hawaiian and Thai chilies. Pele's Breath has aromas of campfires, freag pine and leather; with flavors of chipotle amd burnt orange that finishes with subtle spicy notes.

Waikiki Brewing Co. - Skinny Jeans
Style: American IPA
ABV: 6.40% IBU: 56.0

Back before the “juicy” New England style IPAs were blowing up on Instagram, there was a very hip style of IPA – the West Coast IPA. Very highly attenuated and light on malt, these beers were hopbursting before it was cool. We used Mosaic and Simcoe which are much loved for their respective tropical/blueberry/rose blossom and dank/piney/resinous aromatics.

Light and crushable with just a hint of...tea? Yep, this medium bodied island style lager was brewed with Ceylon black tea; just enough for hopes and dreams! Hopped with a tiny amount of the infamous Ekuanot variety to help carry the tea along. Add that beautiful yeast strain used south of the border and you've got WBC's first lager!! Cheers!

The aroma is quickly noticeable which help to invite you in for a taste. You get greeted with an array of flavors going in different directions from bready and bold grainy to tart citrus.

	Waikiki Brewing Co. - The Citra Style: Wet Hop IPA ABV: 6.00% IBU: 80.0 Very clean and bright, with huge aromas of fresh cut citrus, melding with hints of stone fruits, papayas, mangos, and pineapples met with mildly sharp dank resinous bitterness and a pleasantly semi sweet finish that lingers in your whole nasal cavity.

This beer was brewed with hibiscus which gives it that Uʻi, or "beautiful" pink luster! We also chose to use one single hop, a proprietary strand called zoso, which is a mutant of the famed Centennial hop varietal. A special saison yeast was chosen to help nuance the tartness of the hibiscus, and accentuate the fruit characteristics of this beer. Haʻina mai kaʻpuana a okole maluna
