We brewed this beer with raw and malted barley, as well as the seven ancient grains: amaranth, kamut, buckwheat, spelt, quinoa, millet and teff. These ingredients impart a raw and natural grain flavor to the beer and because most of the ancient grains are naturally light in color and unmalted, this beer is pale in color. We hopped the beer with wet Centennial hops.
