We enjoyed the tropical fruit notes we were getting from the Brettanomyces Bruxellenis yeast we used to make a pale ale so we made a 100% Brett. IPA. It was generously dry hopped with Galaxy hops to really accent the pineapple and tropical fruit notes that the yeast was creating during fermentation and the hops just burst onto your taste buds but the bitterness comes back in the finish leaving your pallet dry.
