ABV: 5.20% IBU: 25.0

The mixed culture, oak-fermented version of our flagship Saison. Historically, Saison would have skewed towards the very bitter or the noticeably sour, depending on wort composition and fermentation. Brewed with malted wheat and barley and lightly hopped, this version is tart, funky, and oaky, BFD#is a blend of our favorite barrels from the cellar.

	Fair State Brewing Co-op - BBRR Style: Sour ABV: 5.80% IBU: 19.0 We re-fermented our year-round Hibiscus Sour, Roselle, with a whole bunch of blueberries, blackberries, and raspberries. The result is a fruit-forward beer that's distinctly juicy and fruity, with increased acidity.

Fair State Brewing Co-op - Don't Kill the Wonder
Style: American IPA

Don't Kill the Wonder is a rice flour cereal-mashed IPA featuring Cryo Columbus and Talus, in addition to some curiously experimental hops. We get it if there's some uncertainty about its fruit forward magic, mango and guava floating through a body that drinks lighter than its 7.5 ABV initially hints. Sure, we could give you more answers, but every now and then don't you just want to wonder?

Fair State Brewing Co-op - Flavor Pop Technology
Style: American IPA
ABV: 6.80%

Were still having fun experimenting with the juicy, tropical side of hops through our hazy IPAs. Flavor Pop Technology is a fun phrase that one of our longtime friends (and now suppliers) uses to talk about the latest and greatest in aromatic compound research and hop application techniques. Fun! For this beer, we took Idaho 7 and a top-secret cryo blend, and we introduced them in a few different ways during fermentation to maximize the tropical vibes. We also used a cool-fermenting kolsch yeast to kick in a bit of a fruity character. The result is a super juicy and lightly sweet beer with big pineapple and banana runts notes.

Fair State Brewing Co-op - FSB: 2017
Style: Russian Imperial Stout
ABV: 9.00% IBU: 60.0

Our 2017 Russian Imperial Stout is a blend of 90% clean-fermented RIS aged in 45th Parallel Distilling Bourbon and Rye whiskey barrels and 10% Brett. finished Old Ale that was similarly barrel-aged for nearly two years. Roast, oak, vanilla, and chocolate notes pair with a hint of dark fruit, leather, and a touch of funk. Brettanomyces character may become more evident with aging.

Fair State Brewing Co-op - Keller Kazbek
Style: German Pilsner
ABV: 4.90% IBU: 42.0

An unfiltered German-style pilsner brewed with Kazbek hops from the Czech Republic. Kellerbiers can be modeled after any lager style - in our case the beer is quite similar to FS Pils. Kazbek is an interesting hop that has a pretty unique aroma that is much more "grassy" or almost hay-like, combined with the classic noble hop spicy/floral aroma.
