“It came out of the blue,” we say. “A stroke of inspiration,” we say. As if ideas just appear fully formed via some sort of innate genius. We’re here to tell you, folks, creativity is a grind. It comes with deadlines (that we usually miss), and it holds you to your KPIs. We feel lucky to have been grinding for ten years, and in that spirit, we reunited with our original Head Brewer Niko to present you with an IPA that brings together the best of what we know about IPA brewing. Simcoe Cryo, Chinook from the emerald shores of Oregon, and HBC 638, layered on top of carefully chosen malts.

Fair State Brewing Cooperative - Dad Hat Amber Ale

A modern classic in the making, Dad Hat Amber Ale scratches many a flavor itch. Malty but not cloying, bready but not too toasty, smooth and yet crisp, with just enough hop character to keep it interesting, this German-style Altbier has all the right flavor descriptors in just the right places. Produced in collaboration with Lua Brewing (Des Moines, IA), acknowledged masters of the style, Dad Hat fits just the way you want it to, every time.

	Fair State Brewing Cooperative - Eternal Shrug Style: Black IPA ABV: 6.66% Eternal Shrug is a vehicle for our mutual descent into the gaping maw of existence. It’s also a Black IPA hopped with Oregon Chinook, Columbus Cryo, and Amarillo hops. Brutal levels of pine, resin, citrus pith, and dankness surf atop punishing waves of black malt character. It’s Very Metal, we swear.

Fair State Brewing Cooperative - Modern Solutions
Style: IPA
ABV: 6.40%

We were lucky enough to reunite with our friends at Hacienda Brewing in Door County to brew a new collab. The two recipes share all the same ingredients—a wheat-heavy IPA base, hopped with Columbus Cryo on the hot side, fermented with Fair State’s house Kölsch yeast strain, and dry hopped with loads of Strata + more Columbus Cryo. Hacienda pushed all hot side hops to the whirlpool and left the beer unfiltered—for a Hazy version: Modern Problems. Fair State shifted hopping to the boil to up the bitterness and clarify the beer—for a West Coast take: Modern Solutions.

	Fair State Brewing Cooperative - Pils Style: German Pilsner ABV: 4.90% IBU: 40.0 A German-style pilsner, dry and crisp with a grassy hop aroma from a large kettle addition of Hallertau Mittelfrüh. One hop, one malt, lager yeast. Simple and delicious.

	Fair State Brewing Cooperative - Rudimentary Scrapbook Style: Pale Ale ABV: 5.10% We wanted to create a beer for brewers and non-brewers alike, so we dip hopped a pale ale with our pals at Bent Paddle and called it delicious. Hopped with Chinook, Strata, and Idaho 7, a layer of malt richness, and a crisp cool fermentation—this brew was dip hopped but definitely not double dipped.

This Midwest collab is inspired by the historic Twin Cities 400 train that once connected our cities of Minneapolis and Chicago. All aboard—and if you time it right, you can drink all four before you arrive.

Fair State Brewing Cooperative - The Appearance of Favoritism

When the company’s founding brewer is all of a sudden one of your hop suppliers, we can see where you’d think we are getting preferential treatment. But let us assure you, you too can buy some of the best hops in the country from Yakima Chief Hops! The hops in this Hazy IPA were flash frozen right off the vine and shipped right to Fair State for immediate brewing, resulting in super bright and fresh aroma notes of citra hops and mango.

Style: Italian Style Pilsner

We worked with our good friends at Live Oak Brewing out of Austin, Texas, one of the greatest lager producers in the country, to craft a fine Italian pilsner for the people! By triple decocting Eraclea Pils malt, heavily hopping with Perle, and lagering extra long, we’ve built a pilsner that is both rich and velvety, but also crisp and bright.

Little, Minneapolis design shop & our kick-ass creative partners, is the agency of record for Ad Fed MN's The Show — Minnesota's premier advertising event of the year. So it would be a shame if we didn't brew a beer for all of those thirsty ad people slapping themselves on the back. Toast with this German-style Pilsner. Dry with a grassy hop aroma, it's a crisp & well-rounded lager that invites you to enjoy more than one. And if we 've learned anything from Little, ad people are thirsty.
