Our "Hi-Wire Loves" Series gives us an excuse to hangout, find common ground, and brew some inspired beer collaborations with some great people from around the Southeast. This round we teamed up with our buddies at Flying Machine Brewing Co. to show some love to Wilmington, NC with this Domestic Pale Ale hopped with Sabro, Citra, and Cashmere brewed with Golden Naked Oats and rice. A nod to where craft beer began in the U.S., this nostalgic pale ale is a modern take and features some big tropical fruit aromas courtesy of juicy hops with a balanced bitterness and crisp finish.

Introducing a collaboration of conjoined twins, in a way, from yours truly and Asheville’s Burial Beer Co. Our two breweries opened within just a couple months of each other in the summer of 2013, linked forever by the trials and tribulations of starting in this beer business from the bottom. “Hopped To Death” is a dry-hopped pilsner brewed with Epiphany Malt and a blend of traditional German and juicy American Hops. It’s wet, hoppy, and finishes clean as all hell.

We were lucky enough to hand-pick some Bulleit Rye Whiskey barrels that made for the perfect resting place for a robust barleywine inspired by the classic Manhattan cocktail. Additions of sweet cherry and orange peel accentuate the dark fruit character present in the malt, while Orris and angelica root lend dry, herbal vermouth aromas. Charred oak and tannins from the barrels smooth out the higher ABV beer resulting in a dry finish.

Dry-hopping a lager is not as simple as it sounds. The pieces need to fit perfectly, with the grain bill from malt supporting the bold and wide-ranging flavors and aromas present in juicy American hops. This crisp, crushable lager with notes of juicy tropical lemonade and bold, bright citrus from two of our faves in Luminosa and Citra is elevated to higher heights with additions of flaked rice in the grist, adding to its supreme drinkability.
