We employ a unique fermentation system for Blüme. This process produces a refreshing beer that is restrained in its acidity and balanced by a more robust malt bill compared to a traditional Berliner. You will see Blüme with varying fruit additions throughout the year as items become available and it is also used as a component in blends with our longer term barrel program beers.

An extremely fruit forward and tart version of blume, Celestial is dry conditioned with a special blend of bird pick dried fruit. Muscat grapes, hibiscus, and passionfruit dominate the pallet and a rich, dry, and spritzy mouthfeel will keep drinkers coming back. It’s worth noting that this is one of the sourest beers we’ve made and that’s mainly from the fruit we added.

Thai tea is similar to chai so you'll find notes of vanilla, ceylon, cinnamon, anise and black assam earthiness. Its floral bouquet makes this beer a pleasure to smell.

Los Angeles Ale Works - LA Phil 100
Style: Brut IPA
ABV: 6.20%

Aptly named Centennial hops provide bright notes of lemon peel and mountain pine, while New Zealand Wakatu hops counterpoint with lime and honey fragrances. Inspired by the pastoral groves that blanketed our landscape during the LA Phil’s founding, we packed this beer with juicy orange zest. Adding Jasmine rice to our Pilsner malt bill dries out the beer and delivers a light grain-scented finale.

Lievre is spiced with coriander, chamomile, grains of paradise, Thai palm sugar, and seasonal citrus. The grain bill consists of both Belgian and German malts and is accented with wheat and rye. This variation is made with whole local LA kumquats harvested from around the city. The fruit flavor is assertive on the nose, but remains balanced and not overpowering.
