Paradisi is a golden sour ale aged in neutral oak barrels for 18 months. After blending with a portion of spontaneously fermented stock, we re-fermented Paradisi on grapefruit, calamansi, bergamot, and whole clementine oranges to create complex, perfume-like aromatics, along with balanced citrus acidity.
