XXV is brewed with dates, figs and cocoa nibs. 50% of the final blend was aged in bourbon barrels. According to Brewmaster, Cam O’Connor, “we increased the bourbon barrel aged portion of this year’s by approximately 17%. We also soured a small portion (12%) of the final blend. We added Black Currant (12.5%) to this year’s 25 as well.”

Part of the Bond Street Series. This Fresh Hop Pale Ale is all about celebrating the hop harvest in the fall. Fresh picked hops have to be added to the brew immediately and in abundance. Roughly 270 pounds of Crystal hops from Doug Weathers' farm outside Salem, Oregon will be added to the 50 barrel batch in addition to some dry kilned whole flower hops. That adds up to approximately 5.5 pounds of hops per barrel brewed

Obsidian Peanut Butter Stout is a spin on Obsidian that was inspired by the peanut butter whiskey that has been so popular in the last few years Deschutes brewed it with real peanut butter, and milk sugar to give it the creamy Jiff flavor we all know and love. But far beyond just adding the Dessert stout element, they also blended in a whiskey barrel-aged stout to add complexity, strength, vanilla tannings, and spiciness. Peanut butter and whiskey are pretty much classic Americana products at this point, so what better delivery mechanism then a traditional American Stout. A younger sibling of our first production sour beer, The Dissident. The recipe is the same but this is our first beer fermented entirely with Brettanomyces. After primary fermentation, we racked it into oak casks and added fresh Oregon blackberries. The strong Brett presence conveys cherry and farmhouse aromas. A full-bodied malt richness is balanced slightly by a light acidic tartness then rounded by tannins from the fruit and oak.

The Dissident is an Oud Bruin, a distinctive Flanders-style sour brown ale, with a heavenly aroma and flavor. Our first wild yeast beer, we use Brettanomyces and local cherries to give The Dissident its characteristic sour taste. Our stiffest brewing challenge, it must be fermented in isolation from our other beers for a full 22 months, partly in pinot and cabernet barrels. The words coddled and “worth it” come to mind.
