A hard-charging blend of Pacific Northwest hops leads the way, loading the nose with notes of stone fruit, pineapple, mango and earthy pine resin. Meanwhile, the use of traditional pilsner malts adds levity and dryness to the palate, allowing for a refreshing texture through the finish. The result is a double IPA that is high on hop aromas, balanced in bitterness, perfect for summer.

Firestone Walker Brewing Co. - Anniversary Ale: Firestone XVII
Style: American Strong Ale
ABV: 13.30% IBU: 30.0

As a finished beer, XVII is dark, rich and complex. The lead beers of the blend are Bravo, a lean and oak-forward imperial brown ale and Stickee Monkee, a huge brown sugar infused barley wine. These beers are beautiful on their own but together they bring rich molasses drenched oak flavors and cinnamon glazed almond aromas lifted by high alcohol. In the middle of the blend are our two favorite stouts, Parabola and Velvet Merkin, working in concert to provide a dusty cocoa mocha aroma and bitter dark chocolate flavors. Double DBA makes the blend again this year, bringing its signature vanilla-infused creme brulee flavor. Helldorado, our blonde barley wine, helps to bring balance with its honey notes and light leather nuances. Like last year, a dash of Wookey Jack made the cut bringing with it some fresh hop notes derived from bold Citra and Amarillo creating even more interesting complexity.

South of Barrelworks in the hills surrounding the hamlet of Ojai, there are groves of citrus. Friends offered the W. Murcott Tangerine which we zested for aroma, juiced for flavor. A bountiful bouquet of citrus mingles with pronounced herbal notes, leading to funky, yeasty, citrus flavors. Oak aromas are enveloped by a firm acidity and tartness and punctuated by zesty tangerine.

Firm estery notes of stone and tropical fruit lead to Funky, yeasty, citrus aromas. Soft cereal and Oak flavors are enveloped by a firm acidity and tartness. The finish is dry and crisp; a thoroughly enjoyable beverage. At 4.9% ABV, one could imagine enjoying several Bretta Weisse’s in the Tiergarten, or anywhere else. This Berliner Weisse inspired Wheat beer was aged in 1700 gal French Oak horizontal foeders for 8 months.

This super fruited wild ale pours a deep ruby and bursts with fresh Marionberry character. A variety of blackberry, we added a whopping 3 pounds of Marionberries to each gallon oak-aged wild beer. It then sat on fruit for 3 months in French oak “fruiders.” The final beer has aromas of vanilla and fresh picked fruit and tastes juicy with a crisp acidity and a subtle oak character.

We searched high and low for the perfect strawberry to add to our wild ale. We were not satisfied with the fruit aroma and flavor until we discovered a unique variety from the Mount Hood region in Oregon. It’s bright red flesh, sweet perfume and wild strawberry character is the perfect match for our beer, Champs de Fraises (Strawberry fields). A generous dose of strawberries were allowed a tertiary fermentation with a wheat beer matured 5-24 months in 100% French oak barrels. A fresh sweet strawberry perfume gives way to earthy funk, bracing acidity and malt undertones. A lively carbonation and underlying oak tannins create a thoroughly refreshing beverage. Santé!

Imperial Porter aged in bourbon barrels for one year and six to eight months in cherry bitters barrels. The final blend is 88% bourbon barrel-aged beer mixed with 12% cherry bitters barrel-aged beer. The bourbon and cherry bitters barrels give the beer aromas and flavors of cherry, bourbon, vanilla, tobacco and milk chocolate. Finally, you then add the mild inclusion of sea salt that brings all these flavors together while adding mouthfeel.

El Gourdo is what happens when we create a beer from orphaned Cinderella pumpkins roasted in our wood-burning oven. We add locally foraged California bay laurel, walnuts and fuel the fire with brandy staves and local white oak. The resulting caramelized gourds are tossed into an oak-aged wheat based beer blend for fermentation and further oak barrel maturation. The result is subtle yet firm. Roasting releases naturally sweet spicy pumpkin, brown sugar and hints of bay laurel leaf flavors and aromas, which mingle nicely with an earthy funk, toasted oak and bright acidity. A Sante!

We brewed this massive stout with our friends at Side Project Brewing, and loaded the brew kettle with lots of specialty malts and oats to build a dense, creamy base beer. After aging for a year in wheated bourbon barrels, we recirculated it over a bed of freshly toasted cashews, split and scraped vanilla beans, and sea salt. The finished beer shouts with flavors of toasted coconut and nuts, a combination of milk and dark chocolates, and vanilla soaked in whiskey.

Our first 2013 blend from masterblender Jim Crooks! Lil' Opal is a cunning blend of two-year-old American oak and eight-month-old French oak saisons. Both go through a secondary fermentation and maturation in barrels. This traditional Belgian farmhouse saison has notes of citrus and tropical fruit, a smooth mouthfeel, and tangy crisp finish. Parabolas of past has been aged solely in Bourbon Barrels. Parabola 2021 has a subtle twist being that same base beer was matured in equal thirds bourbon, rye whiskey and wheated whiskey , then blended together. Brewers associate rye as bringing really great black pepper notes to beer, along with a rye bread character. The wheated bourbon barrels add a sweeter mouthfeel, and a cereal grain character which comes through as well. It just adds a layer of depth and complexity even deeper than Parabola already had.

Our newest blended strong ale, Winter Wookey comes just in time for the California winter this year. A blend of Wookey Jack and un-oaked Double DBA, Winter Wookey brings dark chocolate covered dried cherry, candied apple, orange zest and toffee flavors together in a complex, warming blend. Deceivingly drinkable for its size, Winter Wookey balances a big, malty body with a complementary spectrum of hop aroma and bitterness.

Style: Black IPA
ABV: 8.30% IBU: 80.0

A riff on the familiar Black IPA style, Wookey Jack is gnarly on the outside yet refined on the inside. Malted Rye and a dash of Cara Rye impart a spicy grain quality to the palate, while double dry--hopping with Citra and Amarillo hops brings a citrusy dimension to the aroma profie. The brewing team also claims to have incorporated a bit of “Wookey Dust” into the recipe.

The primary twist this year is the inclusion of Helldorado aged in rum barrels and gin barrels.
