Oyster Stout has always been a statement of our identity as a brewery and our connection to our region. It’s the only beer we’ve brewed year-round from 2012 to today. The beer is packaged in a glass bottle, just like when we first started in 2012 with the same Tomales Bay-bred, Hog Island Oysters.

What if you crossed a mango with a grapefruit? Hops can make dreams come true! We added Citra and Amarillo hops at the end of the boil and followed up with a big dry hop of the same. Citra brings that grapefruit zest and mango flesh to the nose and Amarillo brings out pith for some refreshing fruit juice-style bitterness on the tongue. Add a dash of wheat to haze it up and BOOM! your glass is empty.

This duplicitous DIPA is the bigger bolder version of the fantastic Phantom Time IPA and according to Phantom Time Theory, there was no Charlemagne (747-814). Some would say that he actually did exist in a sense but that many ancient rulers, including Constantine (272-337) and Charlemagne were actually the guises of an immortal entity. Seeing as how the immortal being known as “Keanu” was Constantine, it’s also reasonable to think they were the historical basis for the fictional Charlemagne. As we all know, it's impossible to keep all the ancient emperors straight and they were probably all the same creature anyway! One thing is certain this new delicious DIPA is sure to be crowned the king of HenHouse beers.

In a move that was deceitful and curious, the Knick's 1985 draft envelope was placed in a dry ice bath so that NBA commissioner David Stern would be able to identify that particular envelope by its being colder than the others. It’s a bigger beer with bigger flavor so we had to name it after a bigger, hollower thing. Oh, did you not know? Yep. our planet is hollow too. Like a big ol’ coconut and we live on the husk. Speaking of coconuts, all the coconutty goodness in your glass comes from Sorachi Ace hops. We added way more Mosaic hops than Sorachi Ace, but that coconut aroma out shines all of Mosaic’s cannabis character like a coconut tree sprouting up on a pot farm.

Cashmere, Mosaic, Motueka, and Sabro hops blast aroma like a harmonizing horn combo as barley and flaked oats create a bass line of body like a golden guitarrón. Phantom time is a consipracy by the Holy Roman Emperor Otto III, Pope Sylvester II, and possibly the Byzantine emperor Constantine VII, to fabricate the Announcement Domini dating system retrospectively, so that it placed them at the special year of AD 1000. This includes the falsification of the entire Carolingian period, including the figure of Charlemagne, creating a period of "phantom time" of close to three centuries (AD 614 to 911) added to the early middle ages. This IPA is made with Belma, Mosaic, and El Dorado, for a strong pine and watermelon candy aroma.
