The name comes from the fact that it takes 60 gallons of sap to make 1 gallon of syrup. In colder climates, that ratio is more like 40 to 1. But the Munroe family at Waterfall Farm (Ashe County, NC) has to work even harder to extract the goodness from our North Carolina maple trees. The name is a tribute to their hard work. We love working with the enigmatic, curious, and fragile paw paw fruit. North America's largest native tree fruit, paw paws grow in the wild, thriving in areas with wet soil and sunny canopies. Think riverbanks and streams. We get our fruit from Wynn Dinnsen, paw paw visionary of Chatham County. As for the beer, we married the dank, curious fruit with local wheat, flaked oats, and fruity hops like El Dorado and Amarillo. It *looks* like a paw paw beer. It tastes like the Beautiful South in late summer. We're especially proud to up the local grain content on this beer to 83% by weight, delving beyond fruit for a true Southern taste of place.

Avoir la Pêche -- literally, "have the peach" -- is a French idiom for, well, feeling peachy. Peachy keen. Pretty great. We think this kettle sour brewed with South Carolina-grown peaches and a hint of South Carolina-grown tea leaves is pretty great as well. Thick as the August air in a South Carolina orchard, we didn't shy away from packing in a ton of peach flavor. There's no mistaking it...Avoir la Pêche not subtle or delicate, like some of our fruit beers can be. Thankfully, the kettle souring offsets the peach sweetness, lending a refreshing twang. It's a peachy punch, and we think you'll enjoy it.

A small but vocal fan base -- you know who you are -- asks us to keep dark beers in stock year-round, no matter the temp. And they're on to something: after all, the Jamaican Export Stout is a thing. We opted for a fruited porter, using Happy Dirt local blackberries and a 50 percent local grain bill. The blackberry lends a deep purple tint and a tartness that's refreshing, bright, and lightly acidic...a nice counter-balance to the toasty and touch malty notes from the brown porter. If you lean toward dark beers, even with temps in the 90s, we think you'll really enjoy Bramble Arch.

With a touch of wanderlust, Foxfire IPA explores new ground...yet remains deeply rooted in the South. Aromatic hops take center stage with a bright tropical aroma. Yet the fox does not stray too far: ever-mindful of our roots, we ground the beer with a grain bill that includes North Carolina-farmed sorghum.

The vineyard sits just outside of Saxapahaw along the Haw River and the sandy loam soil provides an ideal growing environment for both Scuppernongs and Muscadines. We also brought in bright Lemon Verbena and tart Roselle Hibiscus from Maple Springs Farms, a family owned and operated farm in Northwestern Orange County All of this, combined with 100% local malt, has made for one delightful sour.
