We've worked with High Rock Farm in Gibsonville, N.C. for a number of years now, incorporating their chestnuts into a wide range of beers. This round, it's 1807 (the farm's founding year) -- a Vienna Lager brewed with High Rock's chestnut flour. Nutty, malty, and toasty, this beer is perfect on its own and amazing with a wide range of foods. Support the revitalization of the American Chestnut! Drink beer.

Fullsteam Brewery - 60 to 1
Style: New England IPA
ABV: 7.20% IBU: 30.0

The name comes from the fact that it takes 60 gallons of sap to make 1 gallon of syrup. In colder climates, that ratio is more like 40 to 1. But the Munroe family at Waterfall Farm (Ashe County, NC) has to work even harder to extract the goodness from our North Carolina maple trees. The name is a tribute to their hard work. 	Fullsteam Brewery - 9-Volt Style: Sour ABV: 6.50% IBU: 47.0 9-Volt is a sour IPA with a strong aroma of grapefruit, pineapple, and passion fruit. Brewed with Mosaic, Amarillo, Simcoe, and a touch of Citra this beer's flavor is twangy and tart with waves of muscadine skin, grapefruit pith, and juicy citrus.

We love working with the enigmatic, curious, and fragile paw paw fruit. North America's largest native tree fruit, paw paws grow in the wild, thriving in areas with wet soil and sunny canopies. Think riverbanks and streams. We get our fruit from Wynn Dinnsen, paw paw visionary of Chatham County. As for the beer, we married the dank, curious fruit with local wheat, flaked oats, and fruity hops like El Dorado and Amarillo. It *looks* like a paw paw beer. It tastes like the Beautiful South in late summer. We're especially proud to up the local grain content on this beer to 83% by weight, delving beyond fruit for a true Southern taste of place.

Brewed with 50 pounds of Counter Culture Idido coffee, the aroma is an electrifying introduction to the bright, fruity, and high-acid Ethiopian coffee. Yet it still has some sweet barley notes reminiscent of a more traditional Helles. Earthy and melon tones and a rounded malt character balances the beer and ensures that it's delicious and refreshing.

Avoir la Pêche -- literally, "have the peach" -- is a French idiom for, well, feeling peachy. Peachy keen. Pretty great. We think this kettle sour brewed with South Carolina-grown peaches and a hint of South Carolina-grown tea leaves is pretty great as well. Thick as the August air in a South Carolina orchard, we didn't shy away from packing in a ton of peach flavor. There's no mistaking it...Avoir la Pêche not subtle or delicate, like some of our fruit beers can be. Thankfully, the kettle souring offsets the peach sweetness, lending a refreshing twang. It's a peachy punch, and we think you'll enjoy it.

A small but vocal fan base -- you know who you are -- asks us to keep dark beers in stock year-round, no matter the temp. And they're on to something: after all, the Jamaican Export Stout is a thing. We opted for a fruited porter, using Happy Dirt local blackberries and a 50 percent local grain bill. The blackberry lends a deep purple tint and a tartness that's refreshing, bright, and lightly acidic...a nice counter-balance to the toasty and touch malty notes from the brown porter. If you lean toward dark beers, even with temps in the 90s, we think you'll really enjoy Bramble Arch.

Brightleaf is our first Durhamer, a new style that falls somewhere between an English Mild and an American Brown; and that many breweries in Durham hope captures some of the signature flavors of this region. This hoppy lager, brewed with local grains, pours a dark amber with a pillowy off-white head. It has a rugged aroma that features sweet bready malts, spicy rye, and a prominent hop character that is resinous, piney, earthy and has a touch of spice. The immediate flavor of this beer showcases a strong Simcoe hop character that is complex with woodsy notes of pine, earth, and citrus, which is followed by a touch of spice and sweetness from the malt that then finishes in a pleasant but strong bitterness.

Kentucky Common is an obscure American beer style originating from the coal mining regions of, you guessed it, Kentucky. Legend has it that the beer was made to transition coal miners from drinking bourbon during their lunch break to a low-alcohol tart "beer." Oh, how times have changed.

This is a crisp, clean, German-inspired lager brewed with North Carolina, domestic, and German malts, sweetened with a touch of Riverbend Cumberland corn, and lightly bittered with South African hops. This beer celebrates Juneteenth and supports BIPOC scholarships in the brewing industry. All proceeds, apart from raw material and packaging expenses, will go to the Many Faces Initiative. which provides internships for People of Color in the brewing industry. Our esteemed brewer (and Many Faces alumnus) Austin Bethea took the lead on this South African-style pale lager. Emancipation is inspired by Castle Lager, whose style was the first recorded style from Africa (around 1658).

Pawpaw (Asimina triloba) is North America’s largest native edible tree fruit. For over a decade, we’ve sourced this elusive subtropical fruit from a Chatham County orchard planted by our dear friend Wynn Dinnsen. Sadly, Wynn left us shortly after the 2022 pawpaw harvest. Since his passing, we’ve been the caretakers of his Chatham County pawpaw patch, hand-gathering and processing the thousands of pawpaws that go into this beer. As for the beer itself, Dinnsen's Orchard is a Belgian-style Tripel that relies on an Abbey ale yeast full of banana and bubblegum esters, which pair perfectly with the pawpaw’s natural banana, mango, and pineapple flavors. It’s a tropical explosion in a glass that relies on yeast and fruit -- not hops -- for a burst of juicy flavor. Join us as welcome the return of Dinnsen’s Orchard and celebrate Wynn’s legacy. Without Wynn, there is no Dinnsen’s Orchard.

We brew this Belgian-style Tripel with over 100 pounds of local paw paws per batch. Paw paws, the largest edible fruit indigenous to the United States, taste and smell like a combination of mango and banana custard -- and this beer is no exception. The fruity, tropical aroma gives away to complex and mild spice, finishing with a warm, sweeter mouthfeel.

Farm's Edge: Flying Dragon came about thanks to the foraging efforts of a local friend, who supplied us with local trifoliate oranges. We supplemented the ornamental, bitter orange with sweet Florida kumquats and brewed a fruity saison with new, slightly tart yeast: "Sigmund's Voss Kveik." The result is a vibrant, citrusy, and refreshing saison...brewed with a curious fruit and a curious yeast.

A tart, hazy farmhouse ale brewed with sorghum grown by Peter Fleming of Triple Creek Farms in Yadkin County. Sorghum grounds the beer in North Carolina, while a unique strain of yeast -- Sigmund's Voss Kveik -- lends a refreshing twang. A new hop for us, Ariana, suggests notes of peach and pear. The beer is fruity, earthy, tart and thirst-quenching.

The Fearrington-Fullsteam Fall beer is our take on an English-style Extra Special Bitter (ESB). To give the beer a Southern twist, we add over 100 pounds of cider apple pomace (pressed apple pulp) from Silver Creek and Seamans Orchards in Virginia. These fruity apple tones complement the ESB’s natural nutty and sweet aromas, resulting in flavors of caramel, toasted malts, and a lingering applesweetness.

We brewed this lively, dry-hopped rye saison with N.C.-farmed and malted rye (Riverbend Malt House, Asheville, N.C.), locally malted barley (Epiphany Craft Malt, Durham, N.C.), French yeast, and a generous dry hop. The result is a floral, bright, and spicy farmhouse ale with a pleasant, lingering hop finish.

The vineyard sits just outside of Saxapahaw along the Haw River and the sandy loam soil provides an ideal growing environment for both Scuppernongs and Muscadines. We also brought in bright Lemon Verbena and tart Roselle Hibiscus from Maple Springs Farms, a family owned and operated farm in Northwestern Orange County All of this, combined with 100% local malt, has made for one delightful sour.

Our tribute to the Southern tradition of an RC Cola and a MoonPie. We brew Working Man’s Lunch beer with biscuity malts, vanilla, and chocolate nibs from Raleigh’s own Escazu Artisan Chocolates. We then get a little zany and brew with a German Weizen (Weihenstephan) yeast strain to lighten the beer up and impart estery banana and clove notes. The dark beer for ’round the year!
