Holy City Brewing - Bowen's Island Oyster Stout
Style: Oyster Stout
ABV: 5.80% IBU: 20.0

Oysters impart a silky mouthfeel thanks to their protein-y-ness, and maybe a delightful hint of brine, to the Oyster Stout style. It’s even harder to argue against making beer with oysters once the season hits in Charleston. 2 bushels of succulent oysters harvested around Bowens Island were added to every 15 barrels of this beer, making it a truly local drinking experience.

	Holy City Brewing - Bread and Bitter Style: Extra Special Bitter ABV: 6.50% Along with the Marris Otter and Crystal malts, we added home-baked bread from Keg Cowboy in the mash, to give this beer the flavor and the body that it rightfully deserves. East Kent Golding hops poke through these notes, making for a malty, crisp beer we lovingly refer to as “Bread and Bitter.”

Holy City Brewing - Cap and Joel's Debacle
Style: American IPA
ABV: 7.80%

Doctor Capt'n Sweet Red, a.k.a. Head Brewer Sean Guidera, and Co-Owner Joel Carl joined forces for this one. These two boneheads decided to make a tea with Citra hops that they then used to sparge with. Then these bozos put a mountain of halved grapefruits in the boii. Finally, they threw in a huge AU Galaxy hop addition in the whirlpool. The result is full of bitter, citrusy goodness.

	Holy City Brewing - Casco Viejo Style: Saison ABV: 7.20% Casco Viejo (Panama City’s historic district, from the Spanish for “Old Quarter”) is a saison brewed with lactose and coconut. At 8.8% ABV, it’s got some heft, but the smooth mouthfeel and fruity aromas will leave you dreaming of Pina Coladas and palm trees.”

Holy City Brewing - Dorchester Lite
Style: Light Ale

When you need a cold-brewed, fresh rock spring filtered, smoothtastic light beer that turns your mountains blue...you don't. What you do need is Dorchester Lite, our rice lager brewed with Carolina Gold Rice grown right up the road at Middleton Place. We employed our brand new kettle to do a wholly separate rice mash, which was blended with a base mash of Bohemian Pilsner malt.

Holy City Brewing - Dr. Dunkelstein
Style: Dunkel
ABV: 5.80%

Ask most folks to picture German beer, and they’ll likely imagine something yellow. Delicious and full-bodied, but yellow. Dunkel is just as German as those iconic lagers. In fact, it’s a lager too, but the addition of Munich malt brings out a rich, dark brown color. This recipe sticks pretty closely to tradition, resulting in a clean, crispy, malty, dark lager with a distinctly bready aroma. If it ain’t broke, don’t fix it.

Holy City Brewing - Frank Sappa
Style: American Pale Ale

We combined Falconers’ Flight hops with Australian Galaxy hops, giving this crisp IPA notes of grapefruit, lemon and pine, with some high alpha acid hop-bite and enough essential oil to make this one real dry, hoppy, and extremely fragrant. We counteract the light Pilsner malt with corn to give this one a nice body. It’s piney and sappy, ready to punch you in the nose.

Style: American Pale Ale

Put on your most jangly set of spurs and get ready for our new pale ale, Giddy Up. The color on this one leans reddish - more Bay than Chesnut - and the nose is dominated by a bale-sized addition of Cascade in the dry-hop. Warrior joined more Cascade in the boil, giving this beer a bitter hop girth riding underneath that Cascade bouquet.

Sure, we smile. We wave. We say hello, "hey y'all," and other cute stuff. But that friendliness can be a little overwhelming to folks that aren't used to it. Same goes for this IPA, whose name came from our intern, Brynn. A double dose of Citra and Sorachi Ace in the boil and the dry hop impart a massive, citrusy nose to the beer, which is backed up by pale and wheat malts.

This 4.1% ABV session IPA is a refreshing easy-drinker with a floral nose and lots of hop flavor from some of our favorites, Citra and Mosaic. Look for this puppy in cans adorned with original Shepard Fairey artwork at a brewery near you, and toast to a drill-free coastal SC!

Holy City Brewing - Pecan Dream

This beer was born in a dream. Co-Owner Sean Nemitz arrived at the brewery one day having woken from a dream where we brewed two beers. One was made with boiled peanuts, and the other with pecans. For logistical reasons, we decided to make the one with pecans. 5lbs per barrel of house-roasted pecans are added to this full-bodied American brown ale, imparting a great nutty nose that presents itself more as the beer warms up. Nuts can dream, too.

Obstinate Daughter suggested that we combine tangy, tart citrus flavors with creaminess and saltiness, just like the ideal salad. We did that on the brew floor, starting with Belgian Golden Ale. The citrus comes from fresh citrumelo, which is like a cross between a grapefruit and a lemon. Lactose sugar helped us to add a creamy element to the body and smooth out the beer, and we topped it all off with Bull’s Bay Sea Salt.

Holy City Brewing - Smoked Marzen

When the weather is right, there’s nothing like an Oktoberfest/Märzenbier and all its malty glory. But why make yet another Märzen that gets lost in the shuffle? We decided to include some smoked malt, actually a part of some traditional Märzen recipes, to set ours apart. There’s still a rich, sticky-sweet malt chararcter, and a deep ruby color, but the smoked edge adds a fun turn to the flavor profile and also dries out the mouthfeel a bit.

	Holy City Brewing - Sparkly Princess Style: American IPA ABV: 6.60% We decided to kettle-sour an IPA, to make something hoppy, tart and full of citrus. We used Eldorado as the bittering hop and then we dry-hopped it with even more of the stuff, giving it a mouth-watering hop-nose. Crisp and refreshing

We also added Citra hop oil when we transferred the beer from the fermentation vessels to the brite tanks, to give this beer even more delicious citrus aromatics and flavor.

We checked the overdone spice additions of coriander and orange peel at the door, and instead let the wheat and the yeast work their respective magic. The notes of banana and clove come entirely from that magic, not from any additional ingredients. The end result is a no frills wheat experience, one that quenches your thirst with no extra hang-ups.

Style: Hibiscus Gose

We have worked with the Blue Ion Outpost crew a good bit over the last year, designing labels for Sparkly Princess, Pedishaw, and Collision Stout We brewed a light beer with Pilsner and Wheat malts, sitting right around 3.3% ABV. We kettle-soured it and before fermentation, added hibiscus and pink sea salt, to give this beer a color to match its funky flavor.It’s salty, crisp and tart, and it’s ready for drinking

Us hombres at Holy City fancy ourselves yeast wranglers… and it took some serious yeast wrangling to ferment this 10% ABV behemoth to completion. The aggressive nose is courtesy of a dry hop with Centennial, Cascade, and Mosaic. Those three varieties are joined by Warrior and Citra in the boil for an all-out alpha acid assault. Put on your big boy pants/blue jeans for this one.
